There's lots of info out there about Mars Curiosity Rover, and since it's working right now it's nicely current and brand new discoveries being made. She could do something interesting on that? My DD is desperate to!
Or the Voyager mission - historical info about what it was designed for/made with (less computing power than the average 7 year old owns these days, pretty much), plus the fact that it's kept going far longer than anyone ever expected and is now at the outer limits of our solar system. It'll be the first man made object to leave our solar system, and is still sending data back about what it's finding.
Model of solar system? To scale (it would be massive though!).
