We're delighted that Ms Cupcake is joining us for a Q&A about vegan baking this week. If you're vegan, know someone with allergies to eggs or dairy or are just interested in vegan baking, post a question before midday on Wednesday 15th May and we'll post up the answers on Weds 22nd May.  Ms Cupcake has also kindly given us access to a couple of vegan cupcake recipes from her first book, Ms Cupcake: The Naughtiest Vegan Cakes in Town. See recipes here for Vegan Red Velvet Cupcakes and Vegan Blueberry Almond  Cupcakes.

Ms Cupcake is a glamorous, fifties-styled vegan baker who dreams of bringing decadent vegan baking to the masses. Originally hailing from Canada, Ms Cupcake moved to London in 1999. She began baking from home when she couldn't find indulgent bakery goods for vegans in London and soon realised that it wasn't just vegans that weren't being catered for, but also those allergic to different foods like eggs and milk. She launched London's first entirely vegan cake shop in Brixton in April 2011, which was recently shortlisted for Britain's Best Bakery on ITV. In her first sumptuous book, Ms Cupcake shares her secret recipes and enthusiasm for delicious vegan cakes and bakes.

All those who join the Q&A will be entered into a draw to win one of five copies of Ms Cupcake's book.

How exciting. I've got her book on my amazon wishlist!

I'm allergic to egg and dairy so make vegan cakes at home and love seeing her creations on facebook. I'd like to know what kind of shortening she uses for her buttercream toppings and does it really make a difference as I've always thought it would taste odd.

I'm vegan and was missing doughnuts, then one day last year I bought a doughnut from Ms Cupcake's shop and it tasted so good I nearly cried. It's still a very fond memory, especially now I'm quite massively pregnant. I've seen vegan doughnut / yum yum recipes online but haven't dared try any yet, and the recipes seem to vary. Can Ms Cupcake share a recipe for a novice or offer tips? Bake them or fry them?

ppeatfruit Fri 10-May-13 17:10:48

Oh how nice to have someone after my own dairy free and wheat free heart. Welcome Ms Cupcake grin

My question is that I'm looking for a good moist recipe for an almond lemon cake and am having difficulty finding one without eggs (i could put egg whites in it I suppose but it would be nice to see if you've got an eggfree recipe ( I'm allergic to coconut oil and potato too !). Thankyou in advance.

shelley72 Fri 10-May-13 17:45:30

Oh my those velvet cupcakes look yummy! My daughter is intolerant to dairy and allergic to soya, would there be any alternative to the milk and soya cream cheese for the cakes? She is 3 next week and would be nice for her finally to have a party where nothing is off limits to her. Am a bit scared of vegan baking so will keep an eye out for the book smile

CecyHall Fri 10-May-13 17:50:57

Thank you, this is the best q & a topic I ever saw, I love this amazing lady so much!

Just need to think of a question now!

superoz Fri 10-May-13 18:07:06

Hi Ms Cupcake! I'm really chuffed you are on Mumsnet, I used to live in Greenwich where you had a stall and got cakes from you for my dairy, egg and nut allergic dd - you made her very happy! It's great to see you making a success of your business smile.
I'd like to know is there a way to make egg free marshmallow and meringue? I would love to have a go at making a dairy and egg free teacake (the ones with shortbread, marshmallow and covered in chocolate), and lemon meringue pie.

CecyHall Fri 10-May-13 18:39:31

Ok, my question is: are you planning on opening any more branches of your bakery, either in London or further afield?

CMOTDibbler Fri 10-May-13 21:03:38

Hi Ms cupcake. I'm not vegan, but enjoy baking gluten free (by necessity) and vegan (because I like to share with allergic friends). I've been making nut butter cookies lately, and though they are gf/df easily, I'd appreciate suggestions for binding them without eggs.

PourquoiPas Fri 10-May-13 21:06:33

Have you got any good vegan and gluten free recipes? I have found good vegan, and good gluten free but neither the twain shall meet it seems!

CMOTDibbler Fri 10-May-13 21:54:05

Try following Chocolate covered Katies blog - she always has a gf option in her recipes, and the ones I have made are really nice. The pumpkin chocolate cake was amazing

trixymalixy Fri 10-May-13 22:46:10

Yy to vegan meringue. I've seen a recipe on the side of egg replacer, but never tried.

londonmum123 Fri 10-May-13 23:02:05

Leafing through the book now - it arrived today and the recipes are fab. Loads of gluten/soya free alternatives too.

Meringue recipe on the packet of Orgran egg replacer is a massive hit with DD1 - pipes and holds shape well. I reckon Orgran meringue and Ms Cupcake's Lemon Curd Slice recipe might come close to lemon meringue pie?

VeganCow Sat 11-May-13 00:58:12

Hi Ms Cupcake. I am going to attempt the blueberry almond muffins, they look divine! The only cake I have ever perfected is a chocolate vinegar cake so it will make a change to try something different.

Can I ask if you are vegan for dietary or moral reasons?

I would love to win a copy of your book!

LentilAsAnything Sat 11-May-13 17:24:53

Hi

Another vegan here, loving how many vegans are popping by!

Just marking my spot, haven't really got a question, just wanted to say well done on the business, and for helping bring veganism to the people.

LentilAsAnything Sat 11-May-13 18:34:07

Ok, I thought of a question. smile

biscuit What do you use for food colouring? I'd love to hear any recipes if you make your own (beetroot etc), or which brands you recommend if ready-bought. I'd love to create things like this: pinterest.com/pin/124130533452298174/, lovely bright colours.
Any other links to cake decorating supplies? Thanks!

Jojay Sat 11-May-13 18:38:35

Thanks so much for coming on here smile
We're not vegan but my twins are allergic to milk and egg, so I'm always looking for baking recipes.
The red velvet cupcakes look great and the cream cheese icing sounds scrummy too!

forcookssake Sat 11-May-13 18:58:13

Hellogrin
I would live a recipe for vegan marshmallows, or a marshmallow style cupcake frosting please!

Tau Sun 12-May-13 18:49:35

Hello Ms. Cupcake!
I had pre-ordered your book and it arrived last week.
Yesterday my son and I baked vanilla cupcakes with strawberry icing, and today we made chocolate-coconut ones. They were/are delicious!grin

Do you have plans to open shops elsewhere in the country?

OHforDUCKScake Sun 12-May-13 21:22:58

heybongo how are doughnuts not vegan?

Hello
My sister in law is vegan and I'd love to bake her something that I can take when I go to see her, but I'd need to be able to make it a couple if days in advance and it would need to travel well (flight to France!). She also follows a very low fat diet, so ideally oil free too - do you have any suggestions or any recipes that would fit the bill??
Thanks.

CecyHall Mon 13-May-13 05:49:04

ohfor lots of doughnuts have egg or whey powder in, you can find a few around without but they can often be few and far between.

HystericalParoxysm Mon 13-May-13 12:26:56

Dear Ms Cupcake, please could you open a branch in Brighton?! There are lots of us vegans down here and we would gobble up all your cakes with glee wink

CecyHall Mon 13-May-13 13:01:08

Yes, I'm hoping for Brighton too!

In the meantime hysterical have you tried the cupcakes by Operation Icing? I think they are sold in Waikikamookau, I really like them and all the profits go to animal charities.

No question from me but checking in as another vegan and cake lover! Thanks MN.

Actually I do have a question, any tips for a dense vegan fruit cake suitable as a wedding cake and able to stand up to being dowelled and tiered? Thank you.

HystericalParoxysm Mon 13-May-13 18:34:22

I haven't, Cecy, but I will plan a mission to get some! Thanks grin

Uzma01 Mon 13-May-13 19:34:39

What are your tried and tested egg replacement suggestions? I've heard/read several suggestions, have tried egg replacer and vinegar but haven't been too happy with the results. Would ideally like something that's not too costly and is readily available.

Carmel99 Tue 14-May-13 13:12:15

Hi Ms Cupcake, yet another vegan here, and I love to bake. I too would like to know what you use for butter in your icing. I use dairy free margarine, but it doesn't keep it's shape when on the cake. I've had your cakes in Greenwich and they're gorgeous. Also, do you measure in cups in your book? I've yet to find a good vegan cake recipe book that doesn't, and measuring fat by volume strikes me as madness!

SundaySimmons Tue 14-May-13 20:09:39

I have bookmarked this thread, thank you.

My teenage daughter became a vegetarian for a few weeks and shopping and cooking was straightforward. Now she has become a Vegan and its a nightmare finding Vegan products and ingredients. She enjoys baking and has been missing 'sweet' tasting things so these recipes are a god send as I have been worrying about her being able to eat a broad spectrum of foods.

SundaySimmons Tue 14-May-13 20:13:08

My question would be, how do I find if sugar is vegan or not? Many foodstuffs say suitable for vegetarians but not vegan even if they are suitable for vegans! Sugar is a really tricky one as some sugar is vegan and some isn't!

showtunesgirl Wed 15-May-13 00:19:57

I have had the pleasure of meeting with Ms Cupcake. She's lovely. grin

BoBoo Wed 15-May-13 10:15:44

Amazing cakes and you wouldn't guess they were vegan if you didn't know. My daughters have a friend that has lots of allergies, including eggs, dairy, gluten and soya. If they have a party I always attempt vegan cakes so that she's not left out, but haven't had much success so far so can't wait to try out a recipie.

Is there an alternative to soya cream cheese that would be suitable for someone with alergies to nuts/dairy/soya, or could you suggest an alternative topping? Thanks.

RachelMumsnet (MNHQ) Wed 15-May-13 12:52:50

The Q&A is now closed. We'll be selecting 20 Questions to send over to Ms Cupcake later today and will post her answers up on Weds 22nd May. Congratulations to CecyHall, CMOTdibbler, LentilAsAnything, TotallyEggflipped and OrangeBlossom2 who have each won a copy of MsCupcakes book The Naughtiest Vegan Cakes in Town. We'll be pm-ing with info about claiming your books.

Ooh lovely, looking forward to receiving the book. smile

LentilAsAnything Wed 15-May-13 19:23:29

Hi, SundaySimmons, you sound like a lovely supportive mum! I can promise you that once the initial learning curve is over, being vegan is remarkably easy.
Burlingtons sugar is available in most supermarkets, and is labelled vegan. Alternatively, you could use sugar alternatives, such as agave nectar, or rice/maple/date syrup. It is a bit of an experiment to start with, getting the balance right to suit your tastes, but it's easy once you get going. MsCupcake, hope I'm not treading on your toes answering this one.

There was a long-running thread for vegans, I've just started a new one, all you lot come on over for a cup of tea and some nice cake! Quiche Questions from non-vegans also welcome.

Ooh! Thank you. Really looking forward to reading the book and baking some treats. Some very interesting questions too so looking forward to the answers.

CecyHall Wed 15-May-13 21:12:25

So pleased, can't wait for the book as I really wanted it but couldn't squeeze it into this months budget!

Off to the new thread now, yay!

LaraMumsnet (MNHQ) Thu 16-May-13 13:17:57

Thank you so much for the cookery book - it arrived this morning, and I'm delighted that the majority of the recipes have a gluten free cooking note. They all look delicious and I'm looking forward to being able to cook egg free for people
