This thread is for the 30 Mumsnetters who took part in the Hellmann's 'Sandwich of the Century' challenge as part of their
LoveFood Hate Waste campaign.

Non-testers: Hellmann's would love to know if you use leftovers in your sandwiches. Do you regularly use your leftovers in a sandwich for lunch the next day? If you don't, do you think it’s something you'd try? Every non tester who adds their thoughts will be entered into a prize draw to win a Hellmann's hamper worth £50.

Here's what Hellmann’s have to say, "For 100 years, Hellmann's Mayonnaise has been at the heart of the greatest Sandwiches but did you know that every day we throw away 200,000 loaves of bread and are even careless with our fillings for example, nearly three million tomatoes, and one million slices of ham are disposed of and not eaten?! At Hellmann's, we love food and we believe eating should be a moment of joy. That's why we hate food waste and are now encouraging you to use your lovely leftovers!"

Testers were sent some Hellmann's mayonnaise along with a welcome pack.

Testers: We've got a set of questions we'd like you to answer about making sandwiches and how you found the Hellmann's challenge. Please also feel free to add any other thoughts you may have.

1. How often do you make sandwiches for yourself and/or your family?
2. How many different types of sandwich filling do you have in one week?
3. Do you make sandwiches the night before or are you an early riser?
4. What are your hints and tips to keep your bread fresh?
5. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?
6. Do you have a favourite sandwich you already made regularly with your leftovers?
7. After taking part in the challenge do you think you will be more inventive in your sandwich fillings featuring Hellmann's Mayonnaise?

Non-tester here.

We do often use leftovers in sandwiches. Today for lunch I had leftover homemade chicken tikka, salad, raita & mango chutney.

If we're doing sausages for dinner, we usually cook the whole pack & there will be a couple leftover. Lovely cold with mustard mayonnaise & lettuce.

Leftover roast chicken, with crispy bacon. mayonnaise & salad.

Tinned tuna, Hummus, cumin seeds, grated carrot, alfalfa sprouts.

We do also buy things specifically for sandwich filings , ham, cheese, etc. All the usual stuff.

All to be served on lovely fresh bread (preferably wholemeal).

I would use leftover pasta to make DD a pasta, sweetcorn and tuna salad using mayo of course. If DW cooks a joint of ham she will often use some of the off-cuts for sandwiches or wraps. Most other stuff gets used in preparing another meal though so leftovers are few and far between really in this house!

Leftovers tend to get used in another cooked meal, or turned into a fork-and-tupperware type packed lunch.

So at this very moment I am scoffing the cold remains of some spag bol, with mayo - Hellmans of course instead of spag. On nom nom! Who needs carbs when you've got Hellmans?! grin

I often put leftover chicken, beef or ham in a sandwich. With mayo and salad, apart from the beef. Yum

We are always using leftovers in sandwiches.

Roast beef with horseradish, mayo and rocket.
Smoked salmon with dill, lemon and mayo.
Chicken with mango chutney, mayo, raisins and curry powder and a big handful of baby spinach.
Chicken with stuffing and mayo.

I am the only person in my house who doesn't eat mayo but then I don't often eat bread either so DH and DCs are happy to hoover anything up.

We have roast beef and roast chicken leftover from a big family do yesterday, DS had already had 1 x chicken Caesar sandwich and has 2 packed for after football. DH will have a roast beef and mustard sandwich when he gets in. I had some of the chicken for lunch in a sandwich.

Left over chicken and stuffing and mayo is a great sandwhich.

Also....left over lasagne on toasted bread rubbed with a bit of garlic oil( or garlic in your mayo)blush. Don't knock it until you tried it.

If I roast a chicken, I always use the leftovers the next day, with salad, to make a sandwich - with a little mayo of course! smile

I use leftover cauliflower cheese in a toasted sandwich, cooled down by a blob of Hellmans Mayo with every mouthful! grin

Non tester here.
Left over roast chicken in a sandwich with mayo and lettuce= food of the gods.
I also really like left over roast potatoes and/or Yorkshires with mayo for dipping... So shoot me! smile

Best leftovers sarnie = cold onion bhaji / mango chutney / red onion / salad leaves / minty yoghurt / all rolled up in a chapati.

2nd best leftovers sarnie - cold omelette, rocket, cucumber, thick granary bread and Lurpak

Best way to use mayo is in an egg mayo and watercress sarnie - brown bread, loads of black pepper

I use left overs a lot in sandwiches. Monday sandwiches are always made from Sunday's roast. My favourite is roast chicken with crispy salad leaves, left over stuffing and mayonaise.
I also love mayonaise blitzed up with some sundried tomatoes and parsley served in a big crusty bap with chopped left over cold sausages.
In the summer I love putting any left over bits of salad in a sandwich or wrap.

I'm hungry now!

We do use left over roast meat in sandwiches, and yes we love Hellmanns (we use the light version). To be honest we don't often have leftovers.

One of my fav sandwiches my mum used to make when I was growing up was tomato, lettuce, cheese and mayo. I often use mayo as a sub for butter / marg.

Non tester, I so wanted to be picked.

I use leftovers, mainly meat, in a sandwich. Most leftovers don't make it into bread. Reading tips here though, yum. Except the cauliflower cheese, yuk!

Leftover sausages or veggie sausages with ketchup and mayo, and poss a little caramelised onion if I have it.
On white sliced or French stick (in which case a few salad leaves also welcome)

I use leftovers all the time either by boxing them up for another dinner or lunch to take to work. Depending on what it is they also go into sandwiches, today I've had leftover roast chicken in a sandwich for lunch and we've used the rest of the meat to make our main meal this evening too.

My DH has been known to put leftover Shepherds pie in a sandwich, and also curry in one too.

non-tester. I do like leftovers in a sandwich smile My dad puts anything on a sandwich so I grew up knowing that nothing was too strange to put on bread! It's especially good if you've got said sandwich at work the next day as it makes it feel more like a proper meal.

Non tester, I will put anything on a 'peece' (Scottish term for random filling in between two slices of bread) smile
Current favourite in the Thong household is bloomer white bread with a spread of mayo, no butter, grated cheddar, chopped up boiled ham and red onion marmalade. Basically a ploughmans sandwich!

I make sandwiches every day for kids and sometimes for my lunch. i am generally a crap sandwich maker and just go for the same boring combinations. I need to get more adventurous, especially for myself as I am veggie, don't like butter or anything 'wet' in my sandwich and tbh dry bread and cheese is not all that exciting.

The kids like ham and cheese coleslaw sandwiches, and we often 'win' in the bread stakes as dh quite likes baking bread and will often make us lovely herby or cheesy rolls to take to school/work.

I use left over meat from a roast dinner for sandwiches, but generally I just plate up leftovers for lunch. I usually factor in enough for at least one leftovers lunch when dishing up dinner.

Non-tester. My DH loves toasted sandwiches made with left over lasagne. Any left over meat is great in sandwiches with a little salad and mayonnaise.
