Ok, it's no secret really....Nigella makes it in her Feast book, here it is
4 rings pineapple from a can
200g butter
200g plain flour
40g cocoa
2 eggs
1stp baking powder
half tsps bicarb
2tbsp malibu (juice form the can of pineapple if you havent got any)
75g cream cheese
125g caster sugar
75g light brown sugar
Whizz cream cheese and pineapple rings together then add all other ingredients. Pour in to 2 well greased 20cm cake tins and bake till firm (25mins) on 180 degrees c
The topping is just 2 egg whites
100g caster sugar
4tbsp golden syrup
quarter tsp salt
quarter tsp cream of tartar
2tsp coconut essence
Put all ingredients except coconut essence in a pyrx bowl suspended over a pan of simmereing water. Mix with an electric whisk for about 7 mins until the mixture goes very thick and glossy white. Take off the heat and whisk in the essence. Pour a third over cooled cakes to sandwich then the rest over the top. Sprinkle with about 2oz of dessicated coconut.
It really does taste like you are eating a bounty!
