Low-carb diets

recipe for LC medium hot curry. no nuts, no dairy?

Any ideas? I'm stumped. Would usually make a tomato* based one to go over chicken but need to leave these out due to allergy, can't use dairy or nuts either for same reasons.

What can I use to make a sauce rather than a dry tikka style curry? I have a hand held blender so could liquify things but what?

(*I realise tomatoes are not particularly low carb but use them sparingly Grin)

Thai green curry using Coconut milk, if you make your own paste you can control the carbs and heat, or read the labels on shop bought? Good with chicken or prawn, green peppers And baby corn.

Ah yes, thai green curry is nice, that would work, thanks.

Any more suggestions? Quite hot and spicy (madras/jalfrezi level) would be ideal.

I've also used a tasteless swede soup as a sauce base for curry. It was either that or throw it out and I don't like throwing out food, especially when I've already put effort into making it.

There are quite a few pre-done sauces that are fairly low carb. Maybe go for an explore at your local supermarket?

I had thought that the pre made sauces were tomato based? Perhaps not.

We had one of the Patak's ones (I don't remember which) and it worked out to about 5-6g/serve. Not perfect but definitely acceptable.

The Pataks sauces all have tomatoes or cream in them. I'm yet to find a pre made sauce that doesn't have tomatoes or cream. In them which is why I'm hoping for a recipe from scratch.

Maybe I will experiment and hope for the best, pureed spinach???

Have you checked the Bootcamp recipe thread? I can't remember if there's a curry recipe on there, but there might be!

Chicken stock
Tin of tomatoes

It's the hairy bikers fiery beef madras (but with chicken) it's absolutely gorgeous I have it with cauli rice even dp loves it and he's not on a diet!
