I'm on nights what can I cook today that will last the next three nights?

I think a run of nights is the perfect time to get serious. I have a bag of lamb mince in the freezer. I was thinking a moussaka?

Sorry probably a bit late now. But I made a low carb chilli on sunday (tiniest bit of onion and tin toms, no kidney beans, extra courgette and mushroom). Ate it on Monday and tues with grated cheese, sour cream, avocado and a few jalapeños. Today with buttered brocolli as the avo was pretty hard. Will probably have again tomorrow as still some sour cream left.

Tastes better every day.
