meal ideas (not recipes)

anyone fancy sharing what your regular meals are?

I get in a bit of a rut with LC so any ideas appreciated.

(I know there's lots of ideas on the bootcamp threads but they're too long to read!)

So my regular meals are:

breakfast: scrambled eggs in various guises. day after day after day...

lunch: chicken and salad. tuna and salad. bacon and eggs or burger and salad if I'm at home.

tea: bolognese (no spag obviously)
slab of meat (lamb or pork chop usually) roasted and served with cheesey leeks of cauliflower cheese
steak and salad/mushrooms.

and that's it!

please share your inspiration...

Breakfast
Frittata (fresh if working at home or cold if some saved), usually with spring onions and courgettes
mushrooms fried in butter sometimes with splash if cream
Full fat philly spread into ham and rolled
Ditto with bit of smoked salmon
Couple of cold sausages (97% pork)
Coffee with splash of cream (when I'm in the zone and key oasis, this is usually enough)
Scrambled eggs with bacon bits

lunch
Tuna mayo wrapped in big iceberg lettuce leaves
Greek salad
Frittata/omelette
Cold salmon with tzatziki (total yog mixed with garlic, cucumber and mint)
M&S rainbow salad bowl with cold diced chicken
Boiled egg salad
Sliced beef with bit of horseradish wrapped round asparagus spears
Feta salad
Halloumi salad

Dinner
Spag Bol with courgette strips no spaghetti
Cottage pie (do extrasmall one for me with cauli topping not potatoes)
Salmon stir fry
Chicken stir fry
Curry (with cauli rice) - cd be chicken of pork
Grilled salmon with salad or steamed greens
Other fish, flash fried with greens
Cabbage parcels (with leftovers - a BIWI recipe)
Aubergine bake or curry (tho prob not best for BC)
Butter chicken with tarragon and splash of cream

Try to vary the green veg as much as poss with above

After BC, reek yoghurt with berries/few nuts and /or sprinkle of linseed for breakfast
Cashews or Flaked almonds with some of stir fries for not if crunch.texture


Sorry for odd typo /weird predictive txt words - on mobile on bus....

Sure others will post other ideas too. Think it's piss to adapt many recipes to low carb WOE and am going to looking at that this time round....

Roll on the 13th. Trying to get in zone tho still eating nuts and dairy...

Breakfast

Eggs in butter
Bacon and eggs with spinach
Avocado
Bavarian sausagesle
When I'm being more relaxed I sometimes make a porridge with almond flour, flaxseed, coconut milk, berries and greek yoghurt.

Lunch: At work I always have a green salad with chopped fennel, avocado, cucumber and tuna mayonnaise.

or sometimes celeriac remoulade with hard boiled eggs.



Dinner:
Cottage pie (topped with swede, leeks, bacon and cheese) so so good.
Jerk chicken thighs with caulflower cheese
Pork chop with creamy leeks
bolognese with courgettes
Chopped up fried chorizo with cavallo nero
Chopped up posh sausages fried with kale and chilli flakes with an egg on top.
Slow cooked pork belly with cabbage
pork belly strips and Creamy braised cabbage
Meat loaf with either minced pork/turkey mixed with feta and grated courgette.
Chicken and chorizo stew
Chicken leg with a little bit of lemon, thyme and seasoning with roasted broccoli/cauliflower.
Pork burgers (smokey with paprika or thai style with dessicated coconut and chilli)

I'm writing all this down to get excited about my carb free future as I climb back onto the wagon.

Main meals:

Cottage pie topped with swede mash
Celeriac bake with sausage or other meat
Cheeseburger pie
Moussaka
Stirfry with various meats
Courgette "pasta" with bolognese sauce
Courgette "pasta" with vegetable & chorizo sauce
Courgette "pasta" with Stilton in cream (gives a rich cheesy sauce)
Fajitas (either in bowl with salsa & cheese, no tortilla or lettuce for the tortilla or with salad)
Roast meat with suitable vegetables
Ratatouille with some form of meat
Baked egg (with tomato & chorizo - I have this instead of pizza)
Baked egg (with cream & chorizo)
Cauliflower cheese with sausage
Chilli without rice (usually add veg as a side dish)
Curry without rice (usually add veg as a side dish)
Peppered steak with a mushroom cream sauce and veg
BBQ meats with salads
Pork chops with creamy leek or mushroom sauce
Hunters style chicken (chicken with cheese inside and wrapped in bacon)
Cheesy leeks with ham or sausage
Roast belly pork with veg
Various stews
Celeriac "chips" with egg and or sausage
Bacon and egg


There's more but I can't think off the top of my head

Daisy: you're post has made my tummy rumble. What curries are safest if you are ordering a take away?

I mix turkey thigh mince with feta, a bit of red onion, oregano, jerk seasoning, one egg, a bit of ground almond. The feta really makes it. You only need a bit. Jamie Oliver has a similar recipe with pork.

Meatloaf sounds yum sj73! Thanks, I'll give it ago!

Not a hundred percent on takeaways... BIWI might be the best person to ask but I'd probably go for a korma as they tend to be mostly meat in a cream sauce or possibly buttered chicken. The carb counts go up depending on what veg is used and if they use flour to thicken... Have to admit if I go out for a curry which is rare, I tend to have what I like without rice and just make sure the day before and after is minimal carbs ie lots of bacon and egg or omelette!!

The idiot proof diet recipe book has some nice curries in and I think a couple of the recipes may be on the low carb recipe thread.

I tend to stick to scrambled eggs with bacon, ham, salmon or something for breakfast.

I find frittatas and homemade soups are useful for lunch as well as salads or leftovers of whatever I had last night so love things like meatloaf that lend themselves to that.

Tea is similar to sj73 and daisy have posted

I generally have a piece of cheese and a small scoop of Greek yoghurt for breakfast - it's just easy and unfaffable.. I struggle enough on school mornings to get up so breakfast can't be anything that requires effort! Cold meats, occasional nuts or bacon and egg on weekend mornings or leftovers if frittata are other options...

For lunch, I often have leftovers - even the tiniest portion (ie I have a tiny scoop of leftover chilli for today's lunch & that will be enough to keep me going till tea) or soups but otherwise salads (summer usually) and sometimes cold meat with cheese/bit of salad. For lunchboxes... Cheeseburger pie and I've recently found moussaka (with or without the aubergine!) makes fantastic lunchbox food and is good cold, salads or finger food type salads (pieces meat, cheese, crudités etc) and I have a Stanley food flask which i fill with boiling water for as long as possible to get the inside hot and then soups, leftover stew/chilli/curry etc...

Lakeland do a flask now where the inside can be taken out and put in a microwave - might be useful for some people who have access to a microwave at lunchtime? I'm thinking of getting one to add to my lunchbox/flask stash!

cheeseburger pie is a mince layer a bit like cottage pie or moussaka with a cheesy eggy quiche like topping!

Cheeseburger Pie

Total carbs 9c. Serves 4

Ingredients:
500g minced beef
50g finely chopped onion
150g chopped mushrooms
100mls double cream
2 heaped tablespoons of mayo
150g strong cheddar grated
3 eggs
salt & pepper to taste

Fry mince, onion and mushrooms (can omit the mushrooms here) together until cooked season to taste, drain off fat, add Lee & Perrins sauce.
Place in a greased foil covered deep pie dish, flatten with spoon (can put sliced mushrooms over the meat layer if preferred)
Beat eggs add mayo, cream and cheese.
Pour over the top of mince, drop olives around the dish and bake in oven Gas mark 5 for 20 to 25 mins until set and golden brown.
Leave to cool before taking out of pie dish, remove foil.

Optional 10 black olives

I use a glass rectangular dish about the size of A4 and I can get 6 portions.

It's yummy hot, I serve with 1-2 portions of veg, it freezes well and it's also fantastic cold with salad so great for lunchboxes.

The basic meat recipe can be adjusted by using marmite instead of Worcester sauce and using a mash to make shepherds pie or use cinnamon 1tsp instead of the WS and some tomato purée to make a moussaka base then add aubergines and an eggy feta cheesy topping.






Frittata I think traditionally has layers of potato... I (roughly) soften garlic, onion (shallot is low carb), pepper and chorizo or ham or bacon. Beat eggs with a dash of cream, season and pour over veg/meat mix. I cook on hob till bottom set then put under the grill till top set. This is my version, I've no idea if it's correct though for a proper frittata without potato!

In the strictest sense, the difference boils down to a matter of folding in a filling rather than mixing it in. Omelets traditionally have the egg mixture cooked and folded around a filling, while a frittata just mixes it all up, cooked in a mishmash combination all at once. Frittatas are often served at room temperature, making them perfect for brunches or larger groups.




Another very similar dish is crustless quiche - grease your quiche/flan dish, add whatever veg, meat, cheese you want the pour over beaten eggs with dash of cream and seasoning. Sprinkle cheese on top if required.

To me all three dishes are pretty much the same, just cooked slightly differently

Thank you daisy, both of these are going on my list.

I've also just prepped the curry from previous poster above (sorry, phone app won't let me go back and check who!) for putting in the slow cooker tomorrow morning.
