leftover leg of lamb soup

Basically the leftover joint is slow cooked in liquid before making the oup. The advantage of this method is that it is easy to strip the leftover lamb from the bone once it has been slow cooked. The liquid that it has been cooked in also contains the goodness from the broth and becomes the stock for the stew. I was amazed how much meat was stripped off the slowcooked bone. It also blended nicely to make a sauce for children's pasta (all three ate it - amazing).

I did a speeded up version of this with my slow cooker on high.

Storecupboard Fish Stew

1 bag of fish pie mix around 500g (got mine from fishmonger with a free fennel) or your preferred mix of fish

1 onion, finely chopped

2 tbsp olive oil (or half oil and half butter or coconut oil)

2 - 3 garlic cloves, finely chopped

1tsp turmeric powder

1 small fennel bulb, trimmed and finely chopped

Few drops of tobasco or 1 dried chilli, finely chopped

2 rosemary sprigs (or dried herbs)

1 bay leaf

1 veg stock cube (optional)

2 carrots thinly sliced (optional)

Squeeze of lemon juice or apple cider vinegar

125ml/4fl oz dry white wine (could be replaced with more water )

Half a jar of passata or 400g/14oz can chopped tomatoes

25 - 50 g ground almonds

Fry veg in your choice of coconut oil or butter and olive oil, add herbs and spices and fry for a minute or two. I also added a veg stock cube and tobasoco here. Add liquids and passata bring to boil and simmer I also added 2 carrots so if using these or any other hard veg simmer until they are almost tender 10 -15 minutes. Add ground almonds, stir then add the fish. Cook on a low to moderate heat until fish is cooked aprox 5 - 10 minutes dep on your preference.

I loved this. Never made anything fishy before other than roasted in the oven. DP had his on microwave rice with grated hard cheese (organic mature cheddar) and I blended some with a little extra water and a little tomato puree for dc's pasta. I had to pop out so had mine reheated as a soupy stew and this did no harm.

Red cabbage another paleo version of a Lisa Faulkner recipe (i didn't follow her measures which were more precise!)

1 red cabbage washed trimmed and finely sliced
some butter
1 onion chopped
2 green eating apples
1 garlic clove
a mug of chicken stock
a good glug of apple cider vinegar
1 - 2 teaspoons of mixed ground herbs (or nutmeg, cinnamon, cloves)
A dash of something sweet - I used a small splash of maple syrup but online I saw the suggestion of dried cranberries

Can all be cooked in a casserole dish in the oven for an hour and a half. I did mine in a large pan on the hob, fried the onion in butter added garlic then the spices then stirred the cabbage through well before adding the cider vinegar and stock. Turn heat down to the lowest point and cook for 1 1/2 hours.

We had it with sausages and veg

Lemonaise chicken dippers (sorry another attempt at nuggets - but worked so wanted to share grin )

This is based on Lisa faulkners rice Krispie chicken but with ground almonds instead of crushed rice krispies and using leftover chicken and some lemon juice (raw chicken can be cut into chunks and dipped into mayo instead of processing together)

Butter for dotting on top of nuggets prior to baking
Mayonaise couple of tablespoons (used hellmans blush needs using up)
A few handfulls of leftover chicken
lemon - couple of squeezes (optional but Favadi suggested it and its yum)
salt (I didn't use any) and pepper or seasoning of choice to mix with the ground almonds

Preheat oven to 200 c
line a baking tray with baking paper
Mix chicken, lemon and mayo (I used a processor but not too much ) roll into balls and roll in a bowl of seasoned ground almonds
Put on lined baking sheet and dot with butter
bake for 20 minutes and turn half way through (consider adding more tiny dots of butter)

They were really moist the children loved them and thought they tasted like chicken dippers (maybe that was the processed mayo though)

Think steaks can be a bit hit or miss anyway giraffe I think I'd tend to put frying steak in something like a Stroganoff....or a stew.

My cooking mojo has drifted over the summer and I'm struggling with inspiration. Here's my latest obsession.....I like to serve it with lots of broccoli. It's quick and easy and I'd eat it every night if I could convince the rest of the family!

Yellow Thai Curry

Shallots
Chicken
Yellow curry paste
Mixed Veg
Coconut milk
Holy basil

Fry up some chopped shallots or onions, add 500g chicken cubed, 1-2 tablespoons of yellow curry paste - depending on how hot you like it. Fry till brown, add favourite veg chopped - veg that requires most cooking first- like carrot, add can coconut milk, cook for around 5-10mins, make sure the chicken is cook through. Add tender veg like bok choi, bean sprouts etc. Then finish with some chopped Holy Basil and serve!

More of a what I had for dinner than a recipe

1. carrots sticks roasted for about half an hour in leftover chicken fat with a sprinkle of mixed spice and a little maple syrup (yum)
2. steaks fried then rubbed with cacoa spice rub (bit too bitter - dp didnt like - maybe cos it was 2 years out of date hmm I liked it with the carrots though )
3. spiralised yellow courgette fried in same pan with garlic
4. purple sprouting brocers steamed standing in a small saucepan with stalks in water

I used so organic frying steaks - they were really tough how should they be cooked? Tips please smile Might slow cook the remaining one and shred as reccomended in paleomg

Chicken nuggets

Ingredients

Enough Almond flour to cover the bottom of a small frying pan (30-50g?)
1/4-1/2 lemon zest
1 egg beaten
2 chciken breasts cut into small strips (about a little finger's width)
Herbs optional
Fat to cook

Method

1) I mixed the almond flour with the zest of 1/4-1/2 lemon (to give a fresh taste), salt and pepper and cooked the mix in a dry pan a medium heat until the desired colour was achieved. Set aside.
2) I marinated the chicken in the egg for a few minutes before cooking it at medium heat in a frying pan. I added a bit of thyme and lemon zest whilst the chicken was cooking.
3) Once the chicken was cooked to a lovely golden yellow, I rolled each piece in the almond flour mix, shook off excess flour and served (lovely with a slice of lemon). It would be easy to pick up with little finger too!

With the left over egg and flour I cooked some thin slices of courgettes (using same technique).
I would think it would work with fish and minute steaks.

Grain free (more or less) banana chocolate muffins

This is based upon comments on this recipe Adriana harlan paleo muffins i was baking with dd so bit slap dash. This would be good post work out ;)

dry
115g ground almonds
small dash gluten free baking powder
pinch of salt
dash of mixed spice

wet
1 egg
2 tablespoons coconut oil
115 ml coconut milk
3 tablespoons honey
1 tsp vanilla

extra
1 small ripe banana chopped
a couple squares of dark choc chopped

Mix together and pour into 6 holes of a greased muffin tray (they came apart a little when taking them out)
bake at 160 ish for aprox 20 mins (I went by smell)

Children loved them slightly warm from oven {keels over in shock }

This is a refreshingly tangy coleslaw for those days when there's no Paleo mayo in the fridge abd its too darn hot to make any!

COLESLAW from London Paleo Kitchen

Summer is finally here, it’s BBQ time, and that means we need coleslaw!

Here’s what you need for this paleo version:

1 large carrot, grated
½ raw white cabbage, grated
1 red onion, grated
30ml coconut milk
2 tbsp wholegrain mustard
freshly squeezed juice of ½ a lemon

How to make it:
Combine the grated carrot, cabbage and onion so they are well mixed.
In a small bowl, thoroughly mix the coconut milk with the lemon juice and wholegrain mustard.
Add this to the vegetables and stir until they are well coated.

Honey and garlic pork chops - BBQ friendly

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: Serves 4

Ingredients:

4 1 to 1 1/2 inch boneless pork chops
Tbsp honey
1/4 cup lemon juice
2 tablespoons soy sauce
2 cloves garlic, finely chopped
1 tablespoon cooking sherry
Preparation:

Mix honey, lemon juice, soy sauce, garlic and sherry together. Place together with chops in a plastic bag and refrigerate overnight. Drain chops saving the marinade. Place chops over the foil on the grill and reduce the heat to medium. Grill about 16-18 minutes or until done.

Drain and boil reserved marinade and pour over chops before serving.

We served with roasted butternut squash and spring greens.

Picnic Ideas

Frittata 
Carrot salad
Raw veg - carrot, peppers, tomatoes
Cured meats
Roast veg with thyme/sage/ rosemary

Savoy cabbage - thinly sliced, red onion, diced pepper, parsley - dress with lime juice, olive oil, white wine vinegar.

Cauliflower and green bean salad Steam cauliflower florets and green beans for 2-3 minutes so that they still have some bite. Toss them into a French dressing with a mashed anchovy fillet and small garlic clove, Dijon mustard and masses of freshly chopped tarragon.

Cauliflower -Toss florets with oil, salt and pepper, and roast in a hot oven until browned and cooked; while still warm, toss with curry powder and a handful of raisins. Pour on the lemon juice.

Green Beans or asparagus - Steam or boil, slice on the bias. Toss with sliced red onion, small pieces of prosciutto, olive oil, lemon juice, a pinch of red pepper flakes, salt and pepper.

Egg salad Make with sesame oil and seeds, tamari or Aminos, rice vinegar or cider vinegar, spring onions and chillies.

Red pepper dip Purée peppers (jarred or tinned are OK) with feta, marjoram or oregano and parsley, olive oil and garlic. Serve as a dip.

Patatas bravas but with celeriac

Cheese balls Mash together equal parts of good grated cheddar, crumbled blue and cream cheese, maybe thinned with a little sour cream. Shape into a ball and roll in fresh chopped herbs and/or hazelnuts.

Chicken wings Cut wings into two parts, toss with olive oil, salt and pepper, and grill or roast until crisp and golden. Whisk together mustard, honey and lemon juice, and toss with warm wings. Chill overnight.

Chicken Poach, then chop or shred. Toss with lemon juice, olive oil and herbs of your choice.

Bacon and butternut squash Roast some bite-size pieces of butternut squash and chunks of red onion with olive oil, salt and pepper. Leave to cool and toss gently with crispy bacon and extra virgin olive oil.
