Hello lovelies.

Some of you are cooking some amazing meals. It would be great to see pictures for inspiration.

I've started with a picture of my pork steaks cooked in butter, chilli, garlic and ginger served with cabbage.

cardoon Sun 27-Jan-13 15:51:09

That looks lovely cat, is there a lot of cabbage tucked under? Makes me think I may be being a bit greedy on the veg front.

are you serving it on a sledge? <seasonal>

catinboots Sun 27-Jan-13 15:54:09

grin

It's my cheap tray from poundland.

I normally have two or three times that amount of cabbage but I was running out.

cardoon Sun 27-Jan-13 15:58:54

Thank god for that grin

NoveltySlippers Sun 27-Jan-13 16:15:34

Looks great cat. I think this board really will work as inspiration, as I thought - hmm, want to try that!

BlackAffronted Sun 27-Jan-13 19:06:17

Dosh, I didnt do the grated cheese version, I used those pre-cut squares of edam cheese, and sprinkled with garlic & chives.

NoveltySlippers Sun 27-Jan-13 19:06:39

Just went back to my Ocado order AGAIN and added five more items. This could get expensive! grin

However, 'tis one of my New Year's resolutions to become a better cook, so it's all in the name of self-improvement my greedy guts

Marking place

catinboots Sun 27-Jan-13 19:48:56

Oh my god! Black you are amazing...

I will be using some of those in my meal planning! I'm going to try the Edam crisps tonight - I have a 2 1/2 hr drive to Milton Keynes and back tomorrow for work so will be needing nibbles....

How did you do the base for the Meatzza??

catinboots Sun 27-Jan-13 19:50:28

Courgetti Carbonara

The corgette is more like tagliatelli as my peeler cuts quite thick slices. It was lush. Am stuffed now....

NoveltySlippers Sun 27-Jan-13 20:04:18

Looks lovely cat.

Sorry to be such a broken record, but this really is so inspiring. It's kind of hard to visualise people's meals when they just list them. This brings them to life! Will post some of mine when I'm on the PC.

BlackAffronted Sun 27-Jan-13 20:37:08

The meatzza base is beef mince, herbs, spices, parmesan. Quite yummy, but I grefer the chicken with pizza topping.

Cat, that courgetti looks fab!

BlackAffronted Sun 27-Jan-13 20:38:25

thekitchenfairy Mon 28-Jan-13 12:59:53

Hehe Black all my pics are uploading upside down, must check settings on iPad as v confused.

Recipe is fab, v simple and standard Saturday lunch chez Fairy...

Leftover pork shoulder, diced small and fried in butter, when warm add shredded cabbage, finely chopped swede and leeks.

A glug of hot water will stop it all sticking, put on a lid and leave for 2 mins.

Stir in a good shake of nigella seeds and a few chilli flakes. Yum! Even the DSs enjoy this one grin

NoveltySlippers Mon 28-Jan-13 19:05:59

Okay, not really a 'meal' this, just testing posting my pics up.

Or you could see this as my celebration of bootcamp light.... berries with yoghurt and flaxseed, for breakfast!

NoveltySlippers Mon 28-Jan-13 19:08:20

Hmm... kinda matches the tablecloth. (You'll be seeing a lot of that tablecloth, if I post regularly.)

Blackaffronted how did you cook those lovely halloumi and bacon bites?

Catinboots I also have cheese slices - how did you make your cheese crisps/biscuits?

Please and thank you!

BlackAffronted Sun 03-Feb-13 18:25:20

MrsH, you just cut the halloumi into chunks, wrap in a small piece of bacon. Pop them all on a baking tray, into the oven at 200C for about 2o minutes.

The cheese crisps, cut the cheese slices into smaller slices, sprinkle with herbs/garlic salt/onion granules. Place onto greaseproof paper and into the oven at 210C for 15 minutes. Let to cool so that they crisp up.

BlackAffronted Sun 03-Feb-13 18:26:43

Steak, fried green beans in garlic butter & creamy mushroom sauce.

Thanks BlackAffronted - I tried the halloumi and bacon last night and they were delish! We fried some of them, and grilled some others, but I will try the oven next time for a bigger batch.

Cheese crisps on the menu for tonight!

Bessie123 Tue 05-Feb-13 23:07:22

novelty you have to whisk the eggs up a lot and then fold the mixture really gently to keep the volume, or they end up looking like pancakes. They are brilliant - great with tuna burgers or nice to layer a couple with cream and strawberries for a low carb 'cake'.

NoveltySlippers Wed 06-Feb-13 21:42:40

Swede fondant is delicious but takes a bit longer to soften than celeriac. I put celery leaves in when reducing the stock too, to give it more flavour, then added a bit of cream at the end to make a sauce.

BlackAffronted Sat 16-Feb-13 19:48:26

Soup was tunrip (Swede if your are English!), a carrot, shallots, spices & stock.

timidviper Thu 21-Feb-13 18:56:06

This is my Sunday dinner.

Pork fillet slit down the middle with those small peppers stuffed with cream cheese pushed in, wrapped in prosciutto or streaky bacon and roasted. I served it with swede mash and mixed veg

Bessie123 Thu 21-Feb-13 23:43:19

Ooh, peppers and cream cheese is a good idea.

This is my tuna burgers with oopsie roll and coleslaw. I had already taken a bite by the time I remembered to take a pic blush. They are so delicious: fresh tuna whizzed in food processor with tamari, spring onions, green beans, ginger, an egg and some flaxseed, to bind. I coated them with that linwoods flax and nuts mix and fried.

Bessie123 Thu 21-Feb-13 23:47:42

Ahem. It has come to my attention that blackaffronted's food looks much nicer than mine. Why does all my food look brown? I am off to get some nicer crockery and some styling help

thekitchenfairy Sun 24-Feb-13 09:41:07

Hey blackaffronted breast of lamb is such an easy roast.... Traditionally it is stuffed with breadcrumbs and herbs to absorb the fat, but you really don't need to. Sainsbos basics comes rolled and trussed... Serves 4 for less than £3 so totally bargainous!!

Roast v high for 20-30 minutes until fat starts to render... Turn down low, gas 2-3, let it sit for a couple of hours.

You will need to drain fat every 30 mins or you risk a fire in your oven!

It is v rich... I like any old green veg with a bit of citrus splashed in, home made coleslaw is great as is swede and celeriac mash.

Sometimes I sit it on leeks and celery with a good sprinkle of cumin seeds.

Comfort on a plate in freezing temperatures grin

BIWI Mon 04-Mar-13 14:16:17

Simon Hopkinson's very lovely recipe for breast of lamb

This is fabulous. But to make it lower in carbs:

- use shallots instead of onion
- halve the quantity of shallots (it makes a huge amount and I always have loads left over)

Or, you can just cook it in your slow cooker.

- season the meat all over with salt and pepper
- brown all over in a frying pan
- transfer to your slow cooker - you don't need to add anything else

BlackAffronted Thu 07-Mar-13 12:27:09
