Parsnip question

I have lots of pasnips up on my allotment. They are beginning to make lots of new growth on top, so my question is: how much longer can I leave them in the ground and pull and eat them for? If not very long, is it possible to pick and store (maybe freeze?) them somehow?

I just frozen the lot i got from mums garden.

I just peeled them cut into chucks and put them in freezer.

If they're starting to grow you should think about pulling them up soon. They could go woody very soon.

or you could leave them and forget about eating them, in June they will have shot up really tall and have extremely beautiful yellow cow-parsley-type flowers that bees and butterflies absolutely adore

Cats, that's what I thought - We had some tonight & they were fine, but I'll lift most of the rest this week I think.

Niminy, I was planning to leave 3 or 4 to collect seed from.
