Tips for dealing with elder trees

I have elder trees in my front and back gardens and they are just wild!

I've been pruning just to make space to get to my bins but would be grateful for some tips fit the best way to keep them under control.

They're about 2 metres tall, not too wide.
It's just the new growth, it's astounding, is there a way to prevent it?

Cut them back where you don't want them. I usually but mine at the allotment back in the winter, and harvest the berries for winemaking in August/Sept.
