There is a great recipe for courgette fritters on Riverford Organics website. One is with feta cheese and is delicious and another gluten free one, also very nice. You can also make courgette cake, similar to carrot cake.

I love courgette sliced and fried with sliced mushrooms then added to pesto linguine - maybe add some brocolli too.

Cbeebies have a great recipe for courgette and carrot muffins on their website. The dc love them and hate both those veg normally.

I also think courgette fried in batter is yummy.

BBQ them, make courgette spaghetti with a spiralizer, my fav is griddles courgettes with puy lentils and feta, soup

We have a dearth too....

I made a nice courgette and potato soup the other week, very simple and quite tasty. My toddler loved it. Recipe here

This evening I made and have eaten 3 of these muffins.

They are delicious and have made an almost perceptible dent in our mountain of courgettes, which appears to be increasing daily - hope the DC like them!

I've also just ordered a Spiralo which I hope will use up a few more of the buggers.

Faye Ripley has a great salad recipe with peas, green beans, courgettes sliced thinly with a potato peeler... Mmmmmm

Slice thinly with peeler and add to pasta with chees

I used courgette as an alternative to pasta when I was low carbing. Sliced it with a potato peeler, put it in a frying pan with some butter, added onions, mushrooms, bacon and cream cheese for the sauce. Lush. grin

Courgette, pea, onion, mint and potato soup made with chicken stock. Annabel karmel weaning recipe that we still use. Made it for lunch.

Slice with potato peeler, fry in butter with garlic, add to pasta,

Make into tempura with batter.

Cbeebies have carrot/courgette muffin recipes, and a courgette/ham/gruyere bake.

EugenesAxe Sat 10-Aug-13 01:06:03

Madhur's prawn and courgette curry is my staple user-upper recipe. Simple spices; only faff is the salting of and water extraction from the courgettes, but that can be managed. For the record, I don't think you need the amount of salt she states.

Make lasagne, but instead of pasta sheets use layers of sliced courgettes

Courgette soup freezes well, add Parmesan and cream when defrosted.

janey223 Sat 10-Aug-13 01:18:09

Courgette fritters are very nice. Grate courgettes, squeeze out water and add to pancake batter (no sugar) with some nutmeg and seasoning. Fry small fritters and serve with tzatziki or a yoghurt/spicy dip.

Or oven roast cubes of courgettes with onion, tomatoes, garlic and peppers (and aubergine if you like) in olive oil. When cooked, add torn fresh basil and use as a pasta sauce (with a bit of grated mature cheddar on top) or as an accompaniment to meat or fish. We have this at least once a week in the summer, it is very easy and healthy.

pollywollydoodle Sat 10-Aug-13 09:22:23

roast veg as^^ but add squash. keep in the fridge and have hot/cold in pitta/sandwiches. roast veg shrink a lot so do more than you think you'll need.

freeze pieces to throw in pasta sauce/chilli/stews etc

lasagne layer sauce (fry onions, garlic ,courgette.simmer in tinned toms with loads of grnd black pepper) lumps of philly then pasta 2 or 3 times. end with philly and cheddar

Chubfuddler Sat 10-Aug-13 09:23:27

Ratatouille

Chub beat me to it (and saved me from trying to spell it!)

Yes to fritters. Slice them into quarters long-ways then take out the seedy bit. Cut the slices into v small dice, or grate.

Put flour into a bowl and add eggs. Beat. Stir in the courgette, some chopped feta and some fresh herbs, maybe some milk. Fry little fritters, a couple at a time.

we then slice them length ways, sprinkle with sea salt and paprika and BBQ , so good, and fast!

I roast it in chunks with snipped up bacon, chopped garlic and olive oil & use as a pasta sauce too.

TempusFuckit Sun 11-Aug-13 07:40:05

Brown, roast with garlic and thyme, then sprinkle over red wine vinegar and goats cheese or feta. Serve with crusty bread.

Sparkles23 Sun 11-Aug-13 07:54:12

Courgette and lime cake is so delicious- and can be made and frozen

SleepyFish Sun 11-Aug-13 08:12:10

Courgette and cream cheese soup is lovely, boil courgettes, potatos and onions in veg stock, add cream cheese at the end and blend. Whole thing takes less than 30 minutes.

ZingWidge Sun 11-Aug-13 10:00:25

is it just me or has the word courgette started to sound a bit strange?

I want to form a girl rock band and call ourselves The Courgettes! grin

We sometimes slice them really thinly, sprinkle with salt, pepper, cayenne a tiny bit of oil then roast until crispy. They taste like yummy crisps.

pollywollydoodle Sun 11-Aug-13 15:50:13

zing they could sing "my courgette fritatta from the lion king...

ZingWidge Sun 11-Aug-13 16:08:01

polly grin that is genius!
do you want to join my band?

Lomaamina Sun 11-Aug-13 16:15:27

courgette and lemon pasta sauce is delicious:

Grate 3-4 courgettes on course grater, fry in small amount of olive oil, stirring as it browns. Add 2 cloves chopped garlic. Add zest of a lemon and parmesan at the end, stir into linguine or similar.

Looks amazing if anyone is still searching for 101 ways with a courgette

starfishmummy Sun 11-Aug-13 16:32:23

Barbecue, griddle or fry until they are a bit singed around the edges. Serve warm with nice tzatziki (preferably home made to deal with the cucumber glut)

MrsBertMacklin Sun 11-Aug-13 16:50:03

Slice with a mandolin, salt (no need to precisely salt each slice, just throw it over then mix the slices among each other), leave for 10 minutes.

Pick up the slices and wring the excess water out using your hands, then pop into a bowl and drizzle over a bit of olive oil.

Heat griddle pan, then quickly singe the slices in batches.

Dress with red wine vinegar and a bit more olive oil. Add in shaved parmesan and toasted pine nuts. Add feta or mozzarella if you want a more substantial dish, otherwise it's a nice side salad.

Griddled courgetts also keep well in olive oil for about 5 days, to toss in with some pasta.

pollywollydoodle Sun 11-Aug-13 17:40:21

yes please zing ...need to let you know that i sing like hilda ogden though grin

mrsbert once you've squeezed them, do you have to rinse the salt off?

MrsBertMacklin Sun 11-Aug-13 18:42:53

I don't rinse the salt; I only use a half teaspoon or so, they don't need heavily salting to get the water out.

MichelleRouxJnr Sun 11-Aug-13 19:42:12

Put them in burgers.
As in IN burgers. In the mix.
A la Hairy Bikers - such delish burgers and they're from the healthy Hairy Dieters cookbook.
The recipe says 1 small courgette per 400g beef - but I use much more courgette. More like 3 courgettes to 500g beef...makes more burgers and they really are tasty.
Great way to sneak veggies in where veggies might not be welcomed wink

Takver Sun 11-Aug-13 20:10:19

Agree grated courgette in burgers (I am less classy and mix grated courgette in with Sosmix grin )
Pickled courgettes - fantastic in cheese sandwiches:

1kg courgettes
1/2 cup sugar
2 medium onions
1 teaspoon celery seed
1/2 cup salt
1 teaspoon mustard seed
2 1/2 cups white wine or cider vinegar
1 teaspoon turmeric

Wash and trim the courgettes, peel the onions, and chop both into slices 1 to 2mm thick. Put the sliced courgettes and onions into a bowl and cover with water. Sprinkle with the salt and leave for 1hour, then drain through a colander but do not rinse, and put into a large saucepan.

Mix all the remaining ingredients and bring slowly to the boil. Pour the boiling mixture over the vegetables and leave to stand for 1 hour. Then bring everything very slowly to the boil, cover, and simmer gently for 10 minutes, stirring very gently from time to time, but being careful not to break up the courgettes.

Spoon into clean sterilised jars and cover. Ready to eat after about a month, and will keep all winter

thanks mrsbert

Courgette and ham is one of the world's greatest pizza toppings, IMHO.

I tend to grate it straight into things, often without even cooking - for example into risottos and pastas not long before serving. Courgette fritters/latkes are also delicious - we use grated courgette and carrot with chopped spring onion in ours.

Griddled courgette, hot or cold, is also a great filling for wraps, with some crumbled feta and a drizzle of plain yoghurt.

The only courgette cake I've ever made was a bit of a disappointment, but I can imagine it would be excellent in muffins.

Otherwise it makes a lovely and refreshing raw salad, sliced thinly and dressed with chilli oil and crumbled feta, and maybe pomegranate seeds.

American cookery blogs often have a lot of recipes for courgettes - you could try Smittenkitchen or Tasty Kitchen.
