Monday - macaroni cheese with camembert, plus salad
Tuesday - veggie Shepherd's pie
Weds - dp feeding the dds (probably spag bol) and I'll eat later (probably mushrooms and salad of some sort)
Thurs - probably chilli or pasta arabiatta
Beyond that, no idea.
I'm also struggling for ideas this week, plus it is one of those weeks from hell with no time. Argggghhh:
S: went out for Mother's Day lunch so just salads, homemade houmous etc later
M: spinach & pine nut pasta
T: jackets with tuna, salad etc
W: veggie chilli, tortilla wraps, rice, guacamole
T: I'm home late (parents eve) so DH will have to think of something - there's a veggie lasagne in the freezer so might be that

S: postponed mothers day cooking dinner for my Mum - feta cigars to start, Jamies baked sea bass for main, followed by homemade sticky toffee pud

Pork Belly recipe to die for:
1 x Pork Belly, approx 1.5kg (I prefer bone-in, so mine was just over 2kg, for the flavour)
1 tbsp Sichuan peppercorns
1 tsp black peppercorns
2 tbsp Maldon sea salt
2 tsp five spice powder
2 tsp caster sugar
Pak Choi in oyster sauce, to serve
Steamed rice, to serve
Score the pork skin with a sharp knife at 1cm intervals. A stanley knife is the best tool for this job. Alternatively, you can spike the skin all over with a sharp needle. Boil a kettle of water and pour it over the skin of the pork. Leave to drain.
Dry roastthe two types of pepper in a large pan until they smell aromatic. Add these to a spice grinder and grind to a powder before mixing with the salt & five spice.
Dry the pork off completely with some kitchen paper. Flip it over so it's flesh side-up. Rub the aromatic spice rub all over the meat, but not the skin. Make sure to rub it on the sides too.
It's best to let it sit for a few hours, to allow the flavours to permeate. When you're ready to roast the pork, preheat the oven to 230 degrees. Roast the pork for 30 minutes at the high temperature.
Reduce the heat to 160 degrees and roast the pork for 30 minutes for every 500g of meat

hhhhmlot's of yummy ideas, i haven't made mine for the coming weeks yet so may be stealing some ideas. i usually do a 2red, 2white, 1each of fish (oily&white) and a "cheat" night which is either pizza chips and bean or scrambled egg beans and toast.

Girls have cooked dinner at school each day so we vary things a bit in the holidays
Sunday - roast belly pork, roast potatoes, roast cauliflower with cream, peas, carrots, gravy, crackling, wheelbarrow to get home in etc etc
Monday - fish (salmon for us, salmon fishcakes for children), mixed veg
Tuesday - stuffed pasta and tomato sauce (needs to be quick, swimming / dancing night)
Wednesday - chicken. Not sure how to serve it yet, possibly in a pie.
Thursday - shepherds pie (already in the freezer from last week) and baked beans/peas - I have a long day and won't have time to cook.
Friday - pasta (courgette / carrot / leek ribbons for us), smoked salmon & creme fraiche sauce with peas
Saturday - sausage inna bun (DS2's birthday party. There will be 9 children here for tea. Erk.). Jammy dodgers. Birthday cake. Possibly a few token grapes for balance. Ketchup is vegetable, yes?
Which reminds me, I must get the pork in - 9 for lunch today too and the joint is almost too large for the pan. Going to roast it a la Frank above and hope for the best.

Well we are only having the chicken pie that was planned for Thursday today. Last Sunday's lamb was HUGE so became a shepherds pie midweek which meant we didn't make the pie till today. I also had a load of left over Curry which i frozw which we will have for tea tomorrow. All in all am very pleased with how many meals I managed to stretch to.

We went through the freezer this morning before doing our weekly food shop and tried to use up as much meat as possible.
My favourite books for inspiration are a little taste of Thailand (love chicken with cashew nuts), Leiths Cookery Bible, Dairy cookbook.

We aren't veggie but eat a lot of vegetarian, partly because meat is so damn expensive. I honestly don't know how people get by without meal planning! How do you know what to buy in the supermarket?

S-Beef & Guiness stew with colcannon mash (it is st.patricks day after all) made a triple batch of stew and mashed potato to freeze.

T- BBQ chicken drumsticks, homemade coleslaw and salad. BBQ sauce is from a jar so will just marinade overnight.
W - both of us out no need to cook.

Have noticed we are eating a lot of coleslaw this week, but that's because I bought a giant green cabbage for the colcannon mash and it needs to get used. I love coleslaw so don't care.

I have a belly of pork recipe which my Mum used to serve us many years ago. It is sort of chinese-y
1) fry some belly of pork cubes (no rind, not too fatty) til brown
2) Add in some soy sauce and pineapple juice
3) Add in quartered mushrooms
4) Add in pinapple chunks
5) Add in frozen peas
Don't cook too long and serve with white rice.

morethanpotatoprints - but how do you know what to get in the supermarket for the weekly shop? Do you just buy a random selection of veg and meat / fish, and then have to do a Ready-Steady-Cook job on the random ingredients you've got? I am seriously confused as to how you can not meal plan.

DS is fussy. Of the above he will only eat the salmon, noodles, pasta on its own, rice and kidney beans from the chilli, chickpeas from the tagine and the pineapple rings and chips. I find it hard work producing a meal plan that includes all the staples (particularly protein) DS will eat without DH and I having to eat the same meals week in, week out.
Morrisons are doing a fresh fish fillet for around £5 for a kilo.
I just bough three kilos, froze two fillets and will be making some tonight. I like to use cod in a curry or fish goujons:
Other stuff I make mid-week are pasta bake, lentils and rice, chicken curry or homemade chicken burger and home made chips. We have meat twice a week, fish twice a week (once oily like salmon) and veggies three times a week in the form of chickpeas, lentils, veg curry etc.
This week the plan is
M: Courgette, chilli and garlic pasta
T: Gnocchi with sausage, chilli and fennel ragu
W: Baked potato with beetroot salad and taramasalata
T: Thai prawn curry
F: Salmon puttanesca, roasted new potatoes and green veg
S: Homemade burgers and fries with strawberry ice cream milkshakes
S: Sauage, mash, peas and onion sauce.
M-Thai green curry with salmon and prawns (leftover from last night)
T-Homemade baked beans on homemade toast.
W-Chinese braised oxtail
T-Pizza, bought dough for the base though.
F-Japanese fried chicken.
S-Sea bream with potatoes and olives.
Yesterday - arabiatta pasta
Today - veggie mince and vege pie with peas and sweetcorn
Tuesday - veggie bean tacos and salad, cheese, soured cream and homemade guacamole
Weds - Sainsbo's coming so I haven't decided on the order from then on but possibly will involve: something with haloumi and salad, something with rice, something with baked potatoes, some sort of pizza.
Loving the idea of the beetroot pizza here's another version from River Cottage, I like capers on my pizza.
Actually it's ages since I've had beetroot, love beetroot and feta salad with cumin seeds and coriander...loving this thread!

T - slow cooked ham with mash and roasted carrots
F - bean chilli with baked tots (and will make enough for freezer)
S - dunno
S - probably mac cheese or spag carbonara
They are tiny black chickpeas. Faster and easier to cook. More flavoursome than their bigger white cousins.

I'm amazed by all these wonderful meal plans.
Not many people seem to eat leftovers any more though? I'm surprised by how many people start afresh each day. It seems quite extravagant. For example, when we eat a roast on a Sunday, we always have cold cuts the next day with vegetables or a salad.
(And we sometimes have it a third day too in sandwiches for lunch Probably showing my age here as my parents used to take it to extremes and make a roast joint last nearly a week)
Meal plans here therefore roughly consist of:
S Roast traditional Sunday lunch
M Cold cuts + veg/salad next day or poss with baked spud and salad
T some sort of pasta heavily laden with veg
W usually chicken or mince dish (eg marinaded chicken legs/ or cottage-shepherds pie)
T veggie Thurs (usually some sort of pulse/veg/casserole or curry or veggie cous-cous dish)
F fishy Fri (fish pie or some sort of fish en papillote in oven)
S take out or eat out (but always make home made veg soup on Thurs at same time as prepping veggie dish and we usually have that for lunch on Sats)
But it is MN law that you must make a roast chicken stretch to at least 3 meals!
To be honest, when I do this, it might sound like starting again for 2 meals but it will be leftover roast chicken in something that looks nothing like a roast. H eats leftovers for lunch every weekday.
I need to get back to planning a whole week. I normally get stuck for what to do on Thursday. Think I'm sussed for this week, though.
S M&S chinese. Broccoli. DS1 had fish and oven chips.
M Bacon, cauliflower cheese, mixed veg, potato wedges (oven chips for DS1 - you'll spot a pattern here)
T Roast chicken. Stuffing (some from the freezer that needs using up). Veggie sausage for DS1. Cauliflower cheese (always better the next day), Carrots & roasties. (Oven chips for DS1)
W Pizza & salad (power is off all pigging day, so quick and easy)
T Chicken sweet & sour. Rice. Oven chips for the boys. Goodness knows what I'll make DS1 for his protein, as he won't eat chicken.
F Fish feet, chips & peas
S No idea. Will decide after we've been shopping. Might do pasta and roast veg, since we won't have had either a pasta dish or a meat free dish for a week or more.
