Home made chicken nuggets - without egg

ds has an allergy to egg. Any ideas how I can coat the chicken without egg?

i just dip the chicken breast strips into seasoned flour and then put on baking tray with olive oil in oven for 15 misn

Homemade Chicken Nuggets

750g minced chicken
175g breadcrumbs
175g grated cheddar
1 tbsp mayo to bind
1 clove garlic
salt and pepper
beaten egg and some fine toast breadcrumbs to coat the nuggets

Preheat oven to 180C. Mix all ingredients up to and including salt and pepper together. Form into walnut sized nuggets and roll them in beaten egg and then in toasted breadcrumbs. You can freeze them now if you want to.

Place on greased baking sheet and cook for about 20 minutes (45 if frozen). Voila!

They don't take long to make and once they are done you can freeze them. They are delicious too!

But they use beaten egg to coat the nuggets...

what about a flour and beer batter (like at the chip shop)

If you mixed some flour and milk it would go gooey enought to stcik the breadcrumbs I think - why not have a practice?

The way I do it is the following:

-Place a cup of white flour, tsp of paprika, salt and pepper in a plastic bag.

-Cut a chicken breast into thin slices

-Place chicken into the bag and shake it wll until chicken is covered.

-Place the chicken into a sieve and cshake it again to remove the excess of flour.

-Place enough oit in a pan as to deep fry them and let them fry up until they are golden.

-Remove with a fork and place them on a plate with a couple of paper towels to absorb the excess oil.

I have tried to do them otherway than deep frying but the flour just comes out. HTH

P.S> Probably we may exchange some recipes, DS is also allergic to egg and I'm racking my brains about how to cook for him

1 1/2 C GF rice cereal - Using rolling pin crush in a zip lock bag

Mix the below ingredients with rice after ground down.
4 T. tapioca flour
1 C Potato flour
1/2 C shredded coconut
2 T. Aunt Jayne's crazy salt

Cut Purdue chicken into desired sizes, wash and pat dry

Mix 2 organic eggs with 1 1/2 C. of Pacific Rice milk
Dip chicken pieces into liquid mixture and then toss in closed zip locked bag and coat with mixture. Cook in canola oil until golden brown."

DH's Homemade Chicken Nugget Recipe (They are to DIE for - I can't touch any other nuggets now.. Bluuurrreeegh! And our DS had an egg allergy too...)

Make breadcrumbs (DH uses a mixture of white and brown bread in a food processor)

Add garlic to bread crumbs

Cut chicken breast up into chunks

Roll the chicken in the bread crumbs (the dampness of the chicken holds the breadcrumbs on)

Oven bake, shallow or deep fry (DH deep fries for 30 secs, then finishes off the oven but blots off any excess oil before serving)

Simple recipe.. but yummy!!!

i saw on an episode of 'mums the word', justine suggesting a way of making home made chicken nuggets. she said, and this idea was from mn, to coat the chicken in apricot jam, then in the breadcrumbs. the jam is sticky enough to make the breadcrumbs stay on and it also gives a sweeter flavour which can help encourage kids to eat them, hth.

Hi. I know this is a really old link, but thought I would still add my recipe. I have used this recipe when ran out of eggs...

- cut chicken into strips
- dip into flour
- then dip into MELTED BUTTER (instead of eggs)
- then Finally cover in breadcrumbs

- fry chicken with breadcrumbs until golden and crispy
- and finish cooking in the oven until chicken is thoroughly cooked

Marinate the chicken in buttermilk first - makes the chicken tender and the crumbs stick.
