I love this, but am away at the moment, without my cookbook, so would really appreciate it if someone could help me out with the quantities please?

6 chicken pieces
1 tblsp olive oil
1 large onion
150g pancetta
2 cloves garlic
280g brown basmati rice
750ml chicken stock
Juice and zest of 1 1/2 lemons
2-3 bushy sprigs thyme
250g frozen broad beans

I love this too - might have it tomorrow now you've reminded me about it

JetBlackCat Wed 27-Oct-10 23:24:20

many thanks sitdown - i thought it was 280g rice but wasnt too sure. smile

dreamingofsun Thu 28-Oct-10 09:46:16

what do you do - just stick it all in and cook? for how long?

JetBlackCat Thu 28-Oct-10 11:25:40

dreaming - brown the chicken then remove. Fry the onion, garlic and pancetta. Add the rice and fry for a couple of mins. Then add the lemon, thyme and stock. Bring to the boil and add the chicken. Cook in oven for about an hour i think (going off memory here).

Oh, and we dont like broad beans, so no idea when they should go inwink

Excellent had forgotten this recipe

Wordsonascreen Thu 28-Oct-10 11:31:47

I can't find broad beans here (dubai) do you reckon frozen peas would be ok (if I added them a bit later) ?

JetBlackCat Thu 28-Oct-10 11:53:22

i sometimes add peas in, about half way through the oven cooking timesmile

JenaiMwahHaHaHaaaaah Thu 28-Oct-10 17:11:14

This sounds promising - I assume it's from her book?

Is it worth getting?

RememberToPlaywiththeKids Thu 28-Oct-10 21:53:59

Can I do it with a whole chicken??

InThisSequinBraYesYouOlaJordan Thu 28-Oct-10 22:19:43

We had this last night - it's lovely. I love her book, it's a realy favourite

JenaiMwahHaHaHaaaaah Fri 29-Oct-10 16:35:26

Am going to give this a try in a few days. If I approve then I might consider buying the book grin

Wordsonascreen I know nothing about Dubai and the broad bean situation, but broad beans are known as fava beans elsewhere.

Wordsonascreen Sun 31-Oct-10 05:42:41

ahhh did not know that.. thanks jenai ..might try that [with a nice chianti]

RememberToPlaywiththeKids Sun 31-Oct-10 22:26:25

Made it last night - was v.good.

No peas or broad beans in the house but had some asparagus that needed using so steamed that and had it on the side.

Only had one lemon, but it didn't suffer (although I have lemon thyme in the garden so used that rather than ordinary thyme). Other main variation is that I used a whole 200g pack of smoked lardons rather than 150g of pancetta.

Dp seemed to think it was OK, ds (10) loved it and had seconds.

I'm rather pleased as anything one pot that goes in the oven rather than having to be lovingly attended to on the stove is a winner - hence I do Silvana's Baked Spanish Risotto often.

Fiddledee Fri 05-Nov-10 16:42:59

DP loved it, both kids hated it

Just got this in the oven - and hoping the jenai's tesco recipe link above shows the wrong quantity of salt!

JenaiMarrHePlaysGuitar Tue 18-Jan-11 13:49:01

Good grief - I'd not noticed that Christian! shock

How was it, btw? I'm making it again tonight - it's become a bit of a staple.

For future reference, should anyone fancy it, I tried to make it with chorizo instead of lardons/pancetta. It was rubbish grin
