egg fried rice

Does anyone have an easy & quick recipe for egg fried rice? My children find plain rice "boring" but I gave them a shop-made egg fried rice the other day and they loved it.

Unfortunately in my experience egg fried rice is quite annoying to make.

I have done it successfully a couple of times but in my recipe you have to boil it the day before and let it cool in the fridge. Otherwise it just clumps together and is sticky, etc.

Once it is cool though I am pretty sure you just fry it up with a little oil, add 2 (ish) eggs that have been mixed in and then anything else you want... ie spring onions,etc!

If you buy the american easy cook rice it does not clump together.
Simply boil the rice and leave to cool for a couple of hours. Whisk up 3 eggs, heat the wok and add some oil (I use olive oil but you can use any), when oil is hot add eggs and leave to cook until looks like an omelette then chop it up and fry until comletely cooked. Add the rice and stir well and then add a 3/4 tablespoons soy sauce and stir fry for a few minutes on quite a high heat until all of the rice is really hot and then its ready to eat. (We sometimes add chicken, peas, mushrooms, bacon or anything else we might fancy).

I could get lost in the BBC food pages.

Ken Hom's egg fried rice is tried and tested and scrummy.

Thanks for the help and sorry for the delay in replying (dh working at home all day yesterday so no access to PC ).
