It is Mexican Week at DS1's school. Tommorow we have been asked to bring in samples of Mexican food. I want to make something that is not too difficult and not too "adult" - any ideas oh wise ones???!???

dips -- guacomole... you could make it fairly bland and serve it with tortilla chips... salsa might be a bit much but again could be calmed down...

My kids love quesedillas - they make their own!

Put some grated cheese on a flour tortilla, fold in half and microwave for 15 seconds. Fold again to give a fan shape. Eat as is, or dipped into a little salsa.

We all had mexican last night, DS (17mths) loved it. I did him fajitas (chicken, red onion, red pepper and a bit of mix), flour tortillas cut into strips and dips of sour cream, salsa & gucemole (sp?). It was great.
