what can I make easily with ground almonds?

I have two bags of ground almonds, I can't even remember what I even bought them for around christmastime, but now would like to use them up.I haven't cooked with them before, so would appreciate any ideas for cakes, biscuits that don't require alot of ingredients!Any ideas please?

chocolate cake is good with part ground almonds instead of flour.Also crumble topping.

I was about to suggest that - 'tis v.yummy. Yes it's the boiled oranges one.

Or another Nigella, her flourless chocolate brownies. They are extremely good crumbled up with icecream and/or berries. mmmmmmmm

I remember someone recommended that last time I asked for a nice dessert, but I didn't have time to do the boiling then, I'll look it up again and perhaps I will give it a go. Flourless brownies and chocolate cake sounds nice. What about easy cupcake, muffin type of things, that come out tasting like almond fingers?

Nigella's macaroons (How To Eat)

Preheat oven to 160C/gas mark 3

Mix 150g ground almonds with 200g caster sugar, then stir in 2 egg whites.

Combine well into a thick cream, then add a scant tablespoon of flour and 1 teaspoon of almond extract.

Pipe - through a plain nozzle - into rounds about 5cm in diameter, leaving space between each onto trays lined with rice paper or Bake-o-glide. (Or I just plonk teaspoons of mixture onto trays lined with baking paper)

Optionally put half a whole almond onto each one.

Bake for about 20 minutes, should still be softish in the centre.

Glad you like the look of the brownies samsonara. I think M+S should ban the milk rolls as I can't come out of the shop without some.

Just looked at your profile and saw the Hummingbird picture. We were going to get dd's 1st birthday cake from there but went to Patisserie Valerie instead. Are the Hummingbird cakes as lovely as they look?

Yes extremelychocolateymilkroll, they were very nice. PV does have some divine looking cakes !
ZacharyQuack, now that is a good recipe for lazy cook like me, only thing is I don't have a piping bag, will it work if I just dollop a spoonful onto rice paper?

Oh yes, I just use a spoon. I do own a piping bag, but never use it once I realised what a faff it is to clean.

Almond muffins (courtesy of Jacksmama)

Preheat oven to 375F. I think that's 175 degrees C or thereabouts, depends on how hot your oven is. The original recipe I was given said 350F but I found 375F worked better for me, perhaps my oven is slow.

Beat together:
2 1/2 cups ground almonds (doesn't matter if they have the skin on or not - I've ground my own whole almonds or have bought the blanched ground ones)
3 eggs
1/2 cup honey
1/4 cup butter or applesauce
1/4 tsp baking soda
1/8 tsp salt
large dash vanilla essence
huge dash cinnamon

Pour in muffin tin (makes about 12), bake for 20-22 min.
They are especially yummy if you sprinkle the tops with cinnamon and brown sugar (and tiny chopped walnut pieces) before baking.

I particularly like these made with the apple sauce with bits in

Garlicky almond soup - I have a mixer that cooks (MIL gave it to us) and it makes fab garlic soup. I think it is based on a Spanish almond soup Ajo Blanco...if you google it you might find a recipe. V good for colds and on snowy days...I might just go and make some!

Thank you all for your suggestions, I'm considering the muffins, almond and apple crumble and the macaroons. extremelychocolately, they have mini ones too

Thanks samsonara. When the snow clears I'll nip out and try them - though maybe a dangerous thing to do as they are closer to me than M+S which limits my milk roll consumption.
