as i'm on a super-duper tight budget this week. stuff like beans, tinned toms and mince, tea bags etc (basic stuff really) have to be included as well, but i'd like to still be able to do something a bit interesting and exciting with the limited budget i have. also, i dont have a freezer at the mo so all needs to be either fresh, able to refrigerate for a week or cupboard type stuff.

thanks in advance for any suggestions xx

Potatos,a ham hock from butcher, which is lovely and costs about two quid, onions and eggs will make a great Spanish omelette.

I think you will struggle to feed a family on 2.50 a day

I will keep a watch with interest!

Pasta Bakes - tuna and sweetcorn one day, hot dog sausages the next! That's what we live on when we're caravanning. Cost about £1.50 each

Lots of potatoes, carrots, bag of cheap sausages, a bag of chicken portions, eggs, pasta and some tins of tuna.

My budget meal is -
1 onion
pack of sausages (cheapest ones if necessary)
1 tin of baked beans
1 tin chopped tomatoes
1 small tin of red kidney beans
1 green pepper

Chop onion & fry it for a bit. Add sausages until brown. Add other ingredients and cook for 10 mins.
Serve with something else eg. rice/pasta/potatoes

Depending on which sausages you buy this can feed all 4 of us for about £1.50

(PS the kids love it)

also, if you make any casserole type things, you can have the leftovers with baked potatoes the next day

In fact I saw on the news that Asda sell 8 sausages for 16p. Can't vouch for what they are like, but it's worth a thought.

do double quantities of what you do with the mince so you have 2 dinners - usually works out cheaper to do that than make 2 separate ones.

for comfort food I love tinned salmon, mash and peas.

ah

am not excited about this week's food

the reason it all went it in the freezer in the first place was because it failed to excite me

Fish cakes made with tinned tuna and mashed potatoes.

Stir fry, with a small ammount of chicken, the more veg you have, the less meat you need.

Risotto, can be made with stock cubes, or soup as a base, add lots of veg, frozen is fine, meat if you have some, or not, if you don't.

Chilli with rice, or

Jacket potatoes with cheese, beans (and cheese?), tuna, coleslaw.

Homemade pizza, or pizza made with french bread or ready made pizza bases topped with anything.
