Something nice to do with sausage meat

I've got about 500g sausage meat in my freezer, left over from Christmas. I fancy doing some sort of sausage roll/pie with it (have also got half a pack of puff pastry to use up).

Do I literally just roll pastry round the meat and cook. Or is there more to it than that?

Or has anyone got any delicious (if not entirely healthy) recipes for sausage meat?

Feel a bit dense, really, but it's not the sort of thing I normally buy. The butcher persuaded me to buy a whole kg for Christmas stuffing, but only used half of it.

chop up some onion and mix up with sage and then roll up in pastry for sausage rolls. i think nigella lawson has some sort of pie in the domestic goddess book using sausage meat.

I sometimes use it for a pasta sauce - roll into little meatballs, cook with onions, garlic, add mushrooms, (any other veg - peppers, broccoli, etc...) passata, herbs, salt, pepper, spoon of sugar, and let simmer for about 20 mins, making sure meat is cooked. Add your veg at appropriate time, so it is not overcooked. Serve over spaghetti or other pasta, with parmesan and a nice salad. Works best if the sausage meat has some nice herbs and seasoning in.

Easy dinner, and whole family loves it. DS always says "mmmmmhhh" to this one.

I have a FAB recipe for a pasta sauce that you can do with sausagemeat - has lots of (hidden, because grated) carrot in it too so v healthy, (although possibly a little bit fatty because you have to brown the sausagemeat). Comes out a bit like bolognese only thicker. Not sure of original source.

225g sausagemeat
a little bit of oil and butter
1/2 medium onion, v finely chopped
3 medium carrots (grated)
Tin of chopped tomatoes
110mls of stock made with 1/2 a stock cube
Bay leaf
Tspn oregano

Cook onion til translucent. Brown sausagemeat (mash it up with a fork). Add carrots and stir for a few minutes. Add tomatoes, stock and herbs, and leave to cook, covered, over low heat for 30 mins. Cook pasta and mix together.

Goes well with fusilli.

Chop up lots of veg, onions, peppers, broccoli stem, carrot etc, herbs (sage esp) and mix with sausage meat. Make a large roll of the mat and wrap in the pastry. Cook on high for 10 mins then reduce temp for 20 or so

the best reciepe that I have found for using sausage meat up is sausagemeat lasagne - it is delicious - I saw it on some cooking programme the week before Christmas and is fab to eat. DH keeps asking for it - but I can't find any sausage meat anywhere!!

Thanks all. And my local s'burys had sausage meat on the reduced counter, so I now have enough to try three of your great ideas!
