Side dish to go with stuffed peppers?

DSC have mentioned liking stuffed peppers so I thought I might have a go at making them for dinner. Stuffing will just be rice & veg based, no mince etc as DSC are vegetarian. Problem is I can't think what to serve with them - salad is a no-no as they wont eat it. If I asked the DSC they'd just say potato smiles or similar which I'd rather not do really!

Chips, made in the oven. Parbol then put on baking sheet for 25 mins or so.

Roast aubergines would go, with some chopped feta on top.

They are often served with plain yoghurt, but you can make the yoghurt a side dish if you like.

Pasta shells with a simple tomato sauce.

I came on to say steak, but even as a meat eater I love Halumi slices sautéed in butter (almost as good!).

Thank you! My mind went blank as I have four DSC and between them they don't eat halloumi, onions, mushrooms, aubergine or salad. Some great ideas here though, definitely some I can use.
