Easy meal nights

Dds will be with dm 2 days a week where they'll get meat potatoes and veg for lunch. So I'm trying to factor that into my meal plans so that their evening meal is a bit lighter. Something like scrambled egg or soup - any other ideas?

Frittata
Toasted sandwiches
A ploughmans style salad

Wraps with cooked chicken and salad.
Cheese on toast.
Soup and toasties.
Jacket potatoes
Egg and soldiers
French toast/eggy bread

Oh thanks, my mind just went blank this week and I couldn't think of anything! I have some curry sauce left over so jacket potatoes sounds good Smile

Quasedillas
Falafel and pittas
Anything on toast, beans, tomatoes, cheese,, avacado, mushrooms
Fish finger sandwiches
Pasta with tuna and sweet corn
Stuffed mushrooms/peppers

Have you a falafel recipe? I enjoy them when I'm out but have never tried them successfully at home!

If it's just normal falafels then I do these.
But I tend to use this sweet potato falfel recipe most. If you like sweet potatoes they're really good!

Fab, thanks. I tend to buy Tesco frozen sweet potato falafels but these look quite easy.
