Vegan protein rich dish for Boxing Day

Hosting lots of family on Boxing Day and I'm cooking a big ham with turkey leftovers and lots of veg side dishes but have a vegan and vegetarian attending.

I would like to make something special for them that's a ham equivalent if you see what I mean - and preferably something I can cook ahead, maybe sliceable too? Am sure others would tuck in so don't want to leave them with just a pile of nuts... help?

You could buy a sausage type mix (Granose I think the make is or Asda do their own version) and then use ready made puff pastry (like JusRol) and make a sausage plait. I do it for Christmas and everyone likes it.

Note in case you were wondering that jus rol tends to be vegan (check the label but a lot of their products are).

Perhaps vegetable lasagna? Using regular pasta or one of the vegetable enriched varieties. Or use lightly cooked aubergine slices in place of the pasta.
Make a thick tomato sauce adding herbs and a white sauce using soy milk or other vegan milk, making sure it's not sweet.
For the vegetable layers you could use courgett, onions, peppers, potatoes, mushrooms, spinach mixed with a little of the white sauce.
For topping vegan cheese or a sprinkling of fresh breadcrumbs mixed with finely grated nuts and herbs.

A thick bean stew with at least three different coloured beans? And some fancy bread. Easy to cook ahead of time and will taste even better after a couple days.

Mmmmm, thick bean stew would be my personal choice. Love them.
I make one using chick peas, beans, butternut, green beans, turnips, celery...
Tastes better after a few hours so definitely making ahead is best.

A few weeks ago I had Coronation Chickpeas at a function as part of the buffet. They were amazing, I'm not a veggie but they were the best thing on the table. Yum! Would need egg free mayo for the vegan.

Check Guardian/Observor veggie recipes. Also //www.vegsoc.org for a shed load of recipes a lot are vegan.
