Vegetarian Pie Dilemma!

BoopTheSnoot · 09/12/2016 14:45

I'm having a get-together on the 17th, and was planning on doing a couple of tray pies to feed everyone. One will be my usual chicken, ham and leek.
But a couple of family members are vegetarian, and I don't want to go with the usual old cheese and onion for them if I can help it.
Does anyone have any veggie pie recipes that are a bit more exciting?

Butternut squash pie is nice...or mushroom?

www.recipecommunity.com.au/baking-savoury-recipes/vegetarian-sausage-rolls/n92zezlr-9d870-926354-cfcd2-eh9yb5y5 I made a pie with this filling (with lot of garlic and a splash of soy sauce) for a barbecue and despite everyone telling me it looked revolting when I was making it, I very nearly missed out on getting a slice for myself.

It is just a variation on cheese and onion, but leek and mild goats cheese with loads of black pepper is delicious! You need to start with an inordanately large pile of leeks though, as they seem to disappear when you sweat them down.

I usually make vegetarian DS a quorn chicken and vegetable pie. Cook the filling in the same way as a meat pie, vegetable stock etc.

This BNS and ricotta wreath is great, and looks really good too!

Richmond Pie. Mushroom, chestnut and walnut with a rich gravy. It makes me very happy. Have to leave out the walnuts for my DC, I replace them with sosmix balls and watercress (my DC have strange tastes).

Look up Guardian vegetarian recipes. I think there are some pie recipes there.

I'm making these for Christmas Day www.bbcgoodfood.com/recipes/1799642/individual-christmas-pies

Also love Quorn's recipe for "chicken" and leek pie www.quorn.co.uk/recipes/quorn-chicken-pieces-and-leek-pie/

Peace - have you seen how expensive Quorn is now? Over £2!! I now no longer buy it. I used to be able to find the 'meat' slices buyt now all the shops seem to stock is the mince, scotch eggs and sausages, occasionally I could get the 'chicken' pieces.

I cooked a fab veggie pie yesterday even though I say so myself Smile

Punnet of mushrooms, one leek and four lumps of frozen spinach. Bit of Dijon mustard, tarragon and some grated nutmeg. Some cream or milk to make it a bit creamy.... puff pastry on the top!

Ocado regularly do an offer of 6 Quorn products for £10 which makes them slightly less than £2. Co Op also sell mince and pieces very cheaply sometimes.
I like it so I buy it.

This is lovely. It's a quiche but could be made with more cream, fewer egg
