Heathy Recipes that can be made in advance

Our wonderful neighours who we adore are going through the worst experience imaginable - I've offered to cook for them which they have accepted - can you help with good healthy recipes I can make in advance and they can heat up later (I'll leave in cooler on their porch) - can't have gluten or pork

If I can freeze, even better

That's very kind of you.

Everyone's idea of healthy is different. But usually stews and casseroles freeze up nicely, make them a bit more watery than you might serve them and freeze them.

I've had Cottage Pie & Fisherman's Pie made for me to freeze when I was ill. Just use extra creamy mash otherwise it won't defrost well - it will be dry.

Soups freeze well - sweet potatoe and butternut squash with coconut and chili is a fave here.

Will keep thinking.

I make turkey chilli and bean stew. I love a lentil casserole too but DH won't allow it.

When a family in our town went through a hard time they were spending hours in the hospital. I got them cases of bottled water and cut up fruit and veg that they could bring with them. After their baby died she wrote the most lovely letter saying how the little snack bags of fruit and vegetables helped her stay healthy.

I used ziplock bags and sometimes would put in a little tub of guac or hummus.

Great idea about the snacks - next round of chemo coming up so ill do that

What a lovely thing to do

Casserole and mash- beef casserole, veg casserole, chicken- white wine, red wine, stock or cream based . Lots of options and mash can be frozen

Dhal

Soups- Thai squash, country veg, misetrone (gf pasta of course) potato and leek, broccoli and Stilton etc

Curries- Thai green, madras, cauliflower and pea curry, potato curry etc

Moussaka

Aubergine parmigiana

Chillis- turkey, sweet Portia to and black bean, mixed bean, beef etc etc

Fish pie, cottage pie, chicken and broccoli pie etc
