I need to cook tonight for a dinner on Wednesday and I'm making a pork and black bean casserole thing. Do you think it would be ok to keep in the fridge and reheat on Wednesday? Or should I freeze it?

I would easily keep it that long provided it went into the fridge as soon as it cooled and was fully cooked through.
Would eat if after five or six days TBH.

Yep, we'd keep it and eat it in this house

Yeah it'll be fully cooked (3 hours in the oven) and can go in the fridge once cooled. I was leaning towards it being ok.

Yes, it will be fine.

Yes - provided you cool it properly before refrigerating, food will easily last 5-6 days in the fridge.
