Quick midweek Healthy meals

Can anyone suggest a few quick midweek meals I can do?
I tend to do things like stir fry or chicken with steamed veg but its getting tiresome now.
I need a few other things to add to my mid week menu.. nothing with pasta tho or unhealthy. I tend to veer towards loads of veg..

Do you like eggs?
My healthy midweek staple would be a big watercress salad with beetroot, mint and soft boiled eggs. Keeps well for leftover lunches too. For carb free it's incredibly filling.

I know puff pastry isn't exactly healthy but dead easy dinner: jus roll with a thin smear of Passata loaded with onion, peppers, squash/sweet potatoes and goats cheese.

I did veggie burritos last night: veg chilli, rolled a portion up in a tortilla (one per person), tucked them into an oven dish, layer of yogurt on top, grated cheese, 25 mins at 200 deg.

I'm a huge fan of a frittata, I don't pre cook the veg because I like things like the peppers do be a little crunchy. I use a tin like you'd use for a vic sponge , chuck anything it really, peppers , sliced potatoes, sweetcorn, mozzarella, onion, tomatoes, whatever really! Then cover in beaten egg (I use 6) in the oven for half hour ish, serve a slice with a side salad

Have you seen on more4 the 15 minute meals with Jamie Oliver? Some look fab and really do-able. Think there is a website or app that accompanies series.

Fish (in foil in the oven, herbs if you're feeling fancy) with couscous and steamed veg. That's about 20 minutes, if you switch the oven on, get the fish in and then sort the veg and the couscous.

Home-made burgers (I do turkey, chickpea and sweetcorn from the Jack Monroe cookbook) in a bun with a salad - burgers made at the weekend and defrosted in the fridge on an oven tray that day, take them out of fridge and shove in oven, make salad while they're cooking.

Baked potatoes (slow cooker or in oven with timer set in the morning) with various toppings.

'Spanish' omelette - fry veg up (ideally leftover potato included), add some chorizo / ham if you have some, beat eggs and pour over the mixture, when bottom is brown finish off under the grill.

That beetroot/watercress salad sounds amazing. Will definitely try it.

Tired - when you say sponge tin, do you mean a loose bottomed one? Don't the eggs leak out?

My favourite lazy meals are baked sweet potatoes (okay these are not really quick but they are zero effort) with easy beany chilli using tinned beans, passata, frozen sweetcorn and spices.

Omelette with roasted asparagus
Chickpea curry using a paste and coconut cream
Veggie hotdogs with corn on the cob (not the healthiest but nice occasionally!)
Flatbreads or pitta with Greek salad, minty yoghurt and bought falafel

Beetroot lovers - this is great as a side with quiche or cheese tart:
diced beetroot
diced cucumber
diced red onion
lemon juice
lots of flat leaf parsley

Also for a nice spag Bol sauce and to trick DD into having veg I blend all chorizo, roasted peppers (jar) onion, garlic, tinned chopped tomatoes and herb, and whatever else you like really in the ninja and it bloody delicious

Noodles with veggies, broth and boiled egg. Will chuck in a bit of meat if any leftover from weekend roast. Healthy, quick, cheap and filling

There's a nice recipe for asparagus and tofu pad thai on the BBC good food website. Also cauliflower and chickpea tagine on the guardian website. Fajitas is another we often do, and jambalaya or sometimes risotto if not in too much of a rush. Another vote for fritatta as well, we make ours in the frying pan.

Have just borrowed rose elliott 30 minutes vegetarian from the library as also feeling the need for some new ideas!

Remus I know you didn't ask me, but I do broth by shoving a chicken carcass (including giblets if you can get them), onion, carrot, celery (including leaves), cauliflower and leek in the slow cooker with salt and peppercorns , covering it all with water, and leaving it on low overnight. Next day I put it through a colander, and that's the broth.

I then usually turn it into soup with a posh stock cube, some fresh onion and carrot and celery and eat it with noodles. It's about 10 minutes work all told (I don't chop or peel the broth veg) but with an overnight gap in between.

Kallo organic stock cubes are great. I use the chicken ones. For veggie stock, Swiss Marigold tubs are good.

funny Any of the mini jelly pot style ones, rather than the older style cubes. I get whatever of those is on offer, doesn't seem to matter on the brand. And Marigold for veg stock.
