Banoffee Pie recipe

Hi,

Does anyone have a great Banoffee pie recipe please? That's what DP requested instead of a birthday cake and I've never made one.

I found this one but was wondering if you have any fabulous ones or just some tips and tricks

Use mix of ginger nuts & hob nobs to make biscuit base. Just use a tin of carnation caramel or jar of dulce de leche for toffee sauce. Stir in a wee bit of whisky, rum or baileys to the toffee sauce or the whipped cream to make it more grown up.

Ruby tandoh has a fantastic one - cardamom laced bannoffee pie, search the Guardian. It's amazing, rich, but not sickly and the cardamom works brilliantly.

I second using the Carnation tinned caramel. So much easier.

Warning: it's addictive, don't leave it lying around the house. Grin

Oooh, I like the idea of using ginger biscuits, shame IKEA is so far away they do some amazing ones.

I've had a look at the recipe and I'm going to give it a go I think if DP doesn't mind the taste of cardamom as I love it.

Oddly, I find caramel sauces fairly easy to make so I'm not worried about that but, mash on the other hand...

Oh well, if dh doesn't like cardamom you'll have to eat it. Wink

Not sure a candle will stay upright in it but maybe after a certain age, candles are not essential?
It sounds like my kind of birthday cake anyway, good luck.

Go for it - Ruby's pie is a much more grown up version, the cardamom is quite subtle. Hope you both love it!

I expect at least the really light twizzler type candles will be fine and I'll just decorate around them or something.

We have to have candles as our toddler is obsessed. I have candles on during the day because of him. and we're big kids as well.
