Inspire me with your favourite soup recipes

I'm making batches of soup this weekend to freeze for take to work lunches.

I've made a batch of Tomato and Lentil and am about to make a batch of Carrot and Lentil. I'd like a third batch to add into the rotation, but I'm stuck for ideas! I was thinking maybe butternut squash, but I want to add some protein in to make it more filling/substantial.

Any ideas?

Do you have a blender?

One of my faves is chicken with celery, carrots, leeks, onions and peppers, with loads of pepper and a squirt of cream and then blend. Really smooth and creamy Smile

Carrots, lemongrass, ginger, fresh coriander, red chilli spring onions and coconut milk all blended together is my favourite.

Dame you have reminded me! The bag of 'red bits' in the freezer is almost full.

I throw in all squishy toms, red peppers, passata, etc and then make a batch of soup when it gets full. A very posh deli sells the most expensive loaf of bread, proper dense bread with goats cheese and red onions. I buy the loaf, make the soup and we pig out on it for a day or 3 Smile

The most amazing soup I've ever tasted was a very buttery butternut squash in a pub. I will try and replicate it this winter.
Stilton and broccoli is also yum if lumpy and not smooth.

Jemima my bulky non blended favourite is veg and bean, depending on what veg and what beans I have.

Spring cabbage and butter beans is good. I add chicken or ham, depending...

Minestrone with cannellini beans and sausage for protein. I add a mix of sweetcorn, diced onion, courgette, peppers and carrots, veg or chicken stock and some tomato paste typically and some wee pasta or pearl barley to bulk it out and make it more filling.

Purple your carrot and coconut milk is my favourite so far.

I have never actually cooked chicken soup! I should probably try. I always make vegetable soups, never meat.

I tried making minestrone last winter but didn't like it, I prefer totally smooth soups that have been through the blender.

Broccoli and Stilton is divine but I'm not certain it's freezable

Red Thai butternut squash soup is lovely- fry onions and squash gently, add a tablespoon of red Thai curry paste, dry off and add coconut milk and stock. Leave for half and hour to reduce/soften and blend. Mmmm

Leek and potato

A good country veg soup is a thing of beauty.

The mn cookbook has a broccoli and mushroom soup which is divine.

I love roast onion soup. I got the recipe from The Aldi Cookbook.
Bag of onions, chopped into quarters with olive oil and garlic, season and put in the oven. 10mins from the end, put some thyme on the onions. When done , blitz with some hot chicken /veg stock and serve with grated cheese on top.

Lentil and bacon is a fave here. DS absolutely inhales it. It's basically carrots, celery, onion all chopped up, smoked bacon medallions chopped up, red lentils, ham stock (using knorr ham stock cubes). Whizzed up with a hand blender. I make a huge batch in my 6l slow cooker which makes about 3-4 meals for us (2 adults and one nearly 3 year old) for this I use 4 large carrots, 4 sticks celery, 2 large onions, 8 bacon medallions, 4 stock cubes and 500g red lentils topped up with water to cover adding more if necessary.

Have you ever made the red soup? Roasted red peppers, red onions, red chillis and red lentils. Fry in olive oil with garlic. Add vegetable stock, then after it's blended add coconut milk.

This soup is similar.

Red soup sounds nice!

Am thinking I might go with something with roasted squash, red peppers, chilli, lentils and coconut milk.

Thanks for starting this thread, I love soup and it's given me some new ideas. My favourite is leek and chickpea (it's a Jamie Oliver recipe). Very simple, soften leeks and garlic in butter, add tin(s) of chickpeas with their liquor and stock, simmer till the leeks are fully cooked, whizz to leave it fairly rough or completely smooth according to taste. I think it's nicer than leek and potato and you've got the added protein.

A very very quick and easy one is tinned peas (in their juice), chopped up onion, a bit of mint if you have it, stock. You don't even have to fry the onion if you want to be quicker and/or save the calories.

Hugh FW's chestnut and sage is the best soup ever and really simple. Nigella's chickpea and pasta soup. Pumpkin soup with tortilla chips

Roast Butternut squash, garlic and thyme, cut squash in half and drizzle with olive oil, salt, pepper, add garlic and thyme and toast Untill soft and caramelised, scoop out middle and blend with some veg stock, done!

Butternut squash soup is really nice with bacon/lardons fried up with onions, carrot and celery as the base, add chilli and thyme once the veg has softened then the chopped squash and stock and simmer til done. I mash with a potato masher rather than blending as you still want the bacon bits

Fellow soup lovers I can really recommend Lindsey Bareham 's 'Celebration of Soup', a small paperbavk with 100s of soup and accompaniment recipes. I must have made 20+ soups from it and most were hits.
