Vegetarian recipes for teenage Dd

Over the summer my 14 year old Dd has decided she would like to be vegetarian when school starts up again in September. I'm slightly concerned that this is a bit of a phase but am willing to support her in her endeavours. However, she is slightly overweight (10st 7lbs) at 5 ft 10 and a picky eater (she won't eat egg or most cheeses other than cheddar), therefore I ideas for healthy, easy to cook vegetarian meals that she won't turn her nose up at would be much appreciated!

Have a look at "the domestic geek" and "mind over munch" on YouTube they do a lot of vegetarian things that are good.

Have a look at Jack Monroe's site, lots of ideas on there. If you do a search on here there was a really good thread with loads of recipes not long ago.
These are some other recipes I like from various different places

this is a really quick pasta recipe.
www.deliciousmagazine.co.uk/recipes/lemon-ricotta-and-cherry-tomato-pasta-bake/this is a a good lemon, ricotta and cherry tomato pasta bake, I know ricotta is a cheese but thought I would suggest it as ricotta isn't very cheesy.
I tend not to go for recipes as such just make veggie versions of the classics veggie chillies and curries, risottos, fajitas . I'm not adverse to some of the Quorn products but I know they are not everyone's cup of tea.

The NHS says she is not overweight! Go ahead and encourage her to be healthy for sure, but calling her overweight seems a bit extreme...Hmm

Will she eat quorn? It's low in fat and really easy. I use the mince for spaghetti bolognese, cottage pie etc and the chunks for curry, sweet and sour or similar. Can make batches and freeze them too so you always have something available

A lot of vegetarian I know tend to overeat cereal based food, so lots of pasta, breads, rices, .....
Does she eat fish, shells, prawns?
Red radicchio nest are nice (dice in a bowl cucumber, celery, fennel and tomatoes, add chopped parsley, olive oil, salt pepper , mix with your hands and fill the carefully removed leaves of radicchio. If she is ok with fish, add to the bowl boiled cod which has cooled) Lovely and a winner with all mu vegetarian guests.

Well some do. Vegetarian is widely use to describe those not eating meat. I know the proper term is pescetarian, but the OP talks about eggs and vegetarian don't eat eggs either

Vegans don't eat eggs. Vegetarians do, but they don't eat meat or fish.

A Modern Way to Eat by Anna Jones is a lovely recipe book, and I have never yet made anything from it that wasn't reasonably well received.

Sorry didn't mean to offend anyone. My best friend has MS and describe herself as vegetarian because she doesn't eat meat because of the inflammatory effect, but she eats fish.

No offence Smile, I was just clarifying. I know a lot of people who do the same as your friend because it's just easier to say you are vegetarian than to go into details of what you can eat and what you can't and why or why not, but it is just that it can then make life a bit harder for vegetarians who then get presented with fish meals by well intentioned people.

Beanfeast is a tasty alternative to minced beef, and mixed with Vegemite it makes a good Bolognese.

I'm "vegetarian" but don't eat eggs , but eat chocolate dairy so not vegan Grin

How about indian food? It's very varied and mostly healthy (go easy on the ghee). Things like dal (lentils), rice, sabjis (basically like veg stew type things)

Also anything can be made with quorn or similar ie spaghetti bolognaise, lasagne , fajita etc etc

The Very Veggie Family Cookbook is good. I have a menu for the week that involves veggie and meat eaters, eg Sunday lunch is a roast but quorn fillets for the vegetarians and meat for the rest. If we are in a rush i use frozen linda macartney as it is nicer than quorn - more tasty.

You will also need to understand a bit about vegetarian nutrition. Specifically ensuring she gets enough iron and essential amino acids. It is easy to do, but can be an issue if you rely on carbs or a limited number of dishes. You need to use a variety of beans and pulses.

Paneer cheese fried and in a sauce is a very not cheesy cheese and they is halloumi as another cheese option. Nuts are an easy protein source and full of trace minerals.
