Freezing ginger

I've massively over ordered ginger and have a ton so was thinking about freezing it. What's the best way to do it? Do you freeze with skin on or whizz it up and freeze in ice cube trays? Or chop it up and freeze it?

I freeze it whole and just grate off what I need

Me too. It peels quite easily frozen, and grates like a dream!

I peel it first and then freeze, then just grate however much I want in to a dish.

I freeze it whole and grate off what I need. I never bother to peel it when frozen either.

I freeze it even if I need it - I find it easier to grate frozen
