Homemade pizza in fan oven - any tips?

How can i get a crispy (or at least cooked through) base when making pizza in a normal oven?
It's always barely baked and pale and definitely not crispy.
There must be a secret to this!

I have used pizza stone, but perhaps I didn't let it preheat long enough? 20min?

I always use a baking tray that has been warming up in the oven, the
metal cooks the pizza from underneath.

The oven needs to be as hot as it can go.

I part bake the bases before adding the topping - about 4 or 5 min in a v hot oven. Add toppings and then another 7ish mins or however long it takes til it looks ready.

It has the advantage of making the topped pizzas v easy to handle. Great if like me you have kids who want to make their own pizzas. You can also part bake them in advance

I roll and stretch the dough as thinly as possible and use the hottest temp I can get.

I've got a non stick, round pizza tray which has holes in the bottom of it.

Oven as hot as it will possibly go. Pizza stone in right at the start of preheating to let heat up. Then use a round pizza tray with holes in the bottom to put the pizza in. A bit of coarse polenta scattered on the tray to stop it sticking will help crunch too. Bake about 10mins right on the top shelf.

I too use non stick pizza tray with homes in it, fan oven at 200 degrees for around 15-20 mins

In a nutshell use a oven proof frying pan and fry the stretched out dough in there on a medium heat for 5-8 mins until it bubbles up and is part way cooked. Then add sauce/toppings and finish in oven.

Other than that make sure you're pizza stone/tray and oven is as hot as possible.

Buy a pizza stone, or bread stone, turn on the oven to the hottest it will go, leave it 20mins then put the pizza on the stone, should only take 10mins for perfect pizza Grin

Yes to the trays with the holes. I spray with fry light and sprinkle with semolina too before I put the dough on.

We also preheat to highest setting. I like deep pan pizzas and we use a Jamie Oliver recipe from his America book.
