Veggie Meal Plan

Can you please help me plan a weekly meal plan of vegetarian dishes? I'm a meat eater but my teens are now vegetarian and I'd like to support them. I'd also like to cut down the meat I eat (eventually becoming veggie myself) so if I meal plan properly I won't be eating pasta every night.

I'm veggie

This week I had
Pasta with green veg and pesto
Hallumi salad
Lentil, butternut squash and spinach curry
Veggie stir fry and noodles
Having a massive pizza takeaway tomorrow Grin

Other things I eat regularly are
Chilli/fajitas with veg/quesadillas with beans and cheese/spanakopita/home made pasties/gnocchi/cauliflower and broccoli cheese with roast potato/home made bean burgers/frittata

There's loads out there and I literally never eat quorn

  1. Veg curry (put some beans or quorn in it) with dhal and rice (cook double the rice you need) Use leftover dhal to make pate for lunches
  2. Egg fried rice, loads of veg and some marinated tofu or braised gluten
  3. Soup, homemade with red lentils or some beans (liquidise so you don't feel you are living off beans and lentils) serve with crusty bread and cheese.
  4. Chili use soya, quorn, home brand mince with lentils vert / puy lentils. Rice or wraps, yoghurt, cheese and salad.
  5. Pad Thai noodles, veg, tofu, nuts


Sneak ground nuts/ flaxseeds etc in flapjack

Don't rely on cheese

I like these Moroccan chickpea cakes.
this bean and veg crumble might be a bit wintery at the mo, but it's good.
this is a really quick pasta recipe.
these kebabs are a good veggie option for bbq, I tend to use halloumi instead of paneer.

I tend not to go for recipes as such just make veggie versions of the classics veggie chillies and curries, quiches, frittata , risottos, fajitas . I'm not adverse to some of the Quorn products but I know they are not everyone's cup of tea.
Broccoli and black bean burritos
Stuffed peppers
Butternut squash, sweet potato and chickpea tagine
Monroe Carrot, cumin and kidney bean burgers.

Tonight's dinner is home made pizza, pesto pasta and salad.

Other staples in our house are:
Veg and paneer curry
Veggie chilli/burritos/fajitas
Shepherdess pie
Halloumi and veg kebabs
Falafels
Various bean and veg stews/casseroles
Veggie sausage casserole

My meal plan last week was

-Pasta with feta, lemon, chilli and broad beans, added some grilled courgettes in too
-Roast veg fajitas with sweet potato wedges, homemade salsa
-Mint and chilli marinated hollumi with Greek salad, flatbread and Turkish tomato bulgar
-roast dinner with main of cauliflower cheese made with 3 cheeses and a herby garlic bread crumb on top with roast potatoes, Yorkshire puddings and veg

  • veggie sausage hot dogs with brioche buns and caramelised onions and home made fries
  • lasagne made with lentils and green salad
  • falafel and hummus burger

Mine this week is
Tonight - takeaway Grin
Tomorrow I am trusting dp to cook so who knows
Sunday - Mac and cheese with veg in there
Monday - roast veg enchiladas
Tuesday - Spring rolls and salad
Wednesday - soup of some description to use up all my going off veg
Thursday - tofu/puy lentil stir fry thing and rice

In the last week we have had:
Veggie Fajitas (peppers, onions, courgettes and baby sweetcorn sautéed with spices and served with refried beans and guacamole) with wholemeal tortillas.
Veggie sausage (Quorn best of British) with mash, leeks and kale.
Linguine with fresh pesto and roasted peppers and baby tomatoes
Lentil and chestnut stew with broccoli and sweet potato wedges
Mushroom Thai curry with hardboiled eggs and rice
Aubergines stuffed with butternut squash risotto.

My family eat a lot of meat substitute/alternative because that's what we all prefer. So we have the veggie version of things like burgers, hot dogs, mince dishes like spag bol & shepherd pie, fajitas, curry, pie & chips etc

I still find it hard to meal plan and probably use more quorn & similar than most but I don't have time for beans and lentils nor want to run the risk someone mightn't like it.

Things we eat regularly:

Veggie burritos - filling made from passata, mixed beans, peppers, sweetcorn, spices

Veggie wraps - filling made from roasted sweet potato, onions, chickpeas, spinach and spices. Roll them then cover with cheese and bake.

Veggie chilli - I prefer it with lentils but everybody else prefers Quorn mince, so we usually have that.

Loads of different veggie curries.

Haloumi and vegetable kebabs.

Thai curry, using baked spiced tofu.

Various soups - Mexican style black bean is our favourite.

Risotto

Veggie sausage casserole

Veggie shepherd's pie

Flatbreads with falafel and Greek salad/tzatziki

Sausage and mash

Cheese, potato and leek bake

Quiche with baked potatoes or new potatoes, plus salad

Dp and I also love lots of mushroom-based meals but the dds won't eat them. Mushroom and Stilton pie is a favourite; also mushroom stroganoff.

I am veggie, and we eat veggie at home. This week we had:

Monday: Thai green curry (with chickpeas added at the end of cooking for protein) and rice
Tuesday: Kidney bean quesadillas (a favourite in our house!)
Wednesday: Asparagus and pea risotto (wouldn't normally be arsed making risotto on a week night, but we had guests)
Thursday: Pasta with a creamy tomato sauce and various vegetables (mushrooms, pepper, onion, spinach)
Tonight we are having sweet potato and lentil Dahl
Not sure what we are having at the weekend but mushroom stroganoff (served with pasta instead of rice) will feature, because I am craving it. And we will have tomato soup with cheese on toast for lunch one day.

These are mostly all recipes from BBC good food, which I highly recommend!

Mushroom pasanda

Ribollata

Roast squash with salad and flat breads

Feta, basil, tomato and bread salad

Aubergine and cherry tomato curry

Mac and cheese

Squash laksa

Red pepper and sweet potato tagine with cous cous

Herb cous cous with peppers and feta

Red lentil dhal and flatbreads
