meal plan!

I know it's weds but I'm feeling motivated to sort out evenings out and this week have stick to a meal plan (so far!), shopped on Monday and making dinners ahead of everyone being hungry and tired!

Mon - we had (pork and apple farm shop) sausages in buns, with baby corn, new potatoes and salad

Tues - chickpea, sweet potato, butternut squash and spinach curry with rice and naans, done in the slow cooker

Tonight we are having a pasta bolognaise bake with loads of extra veggies in it, carrot batons steamed and garlic dough balls. Am making home grown rhubarb pie for after too.

We have been eating slap dash, emergency meals for ages as I'm so tired with baby not sleeping and DH working long hours. I feel better when we eat properly so am trying hard to get on top of things. All inspiration and (easy) meal ideas welcome!

Also mid way through my weeks plan here:
Sunday - steaks with potato dauphinoise, garlic mushrooms, carrots, Brocolli (Father's Day treat)
Monday - pan fried piri piri turkey steaks, homemade coleslaw, new potatoes
Tuesday - shepherds pie with loads of veg in the meat sauce and a layer of mashed carrot under the spuds
Today - chickpea and coriander burgers with homemade slaw, tomatoes and pitta
Thursday - Spag Bol (from the freezer)
Friday - fish, homemade chips and mushy peas

We started yesterday!

Tuesday - homemade quiche, nice bread, beetroot salad
Weds - black bean soup, nachos, guac etc (was gorgeous!)
Thurs - halloumi & mushroom burgers with corn on the cob & salad
Fri - channa dahl with hard boiled eggs, chapatis, minty yoghurt dip and cucumber & onion salad
Sat - out
Sun - veggie sausage toad in the hole with lots of vege
Mon - leek, pea & veggie bacon risotto
Tues - pasta with pesto or tomato sauce
Weds - lazy day - oven chips, homemade mushy peas and something from the freezer (veggie fingers, cheese & onion bake things, pie, whatever people fancy)

Monday I had coconut curry with lentils, sweet potato, peas and spinach
Tuesday: stir fried green veggies with rice noodles
Tonight: pearl barely risotto with mushrooms
Tomorrow I'm making orzo "paella"

Sunday: green bean and fennel noodle stir fry
Monday: herb and pistachio falafel wrapped in cabbage leaves
Tuesday: chickpea and leek stuffed squash with green beans and carrots on the side
Wednesday: ate out at Italian after Finding Dory
Thursday: need to cobble together something using up white cabbage and kale, thinking this www.food.com/recipe/vegetarian-white-beans-with-black-kale-savory-cabbage-72973
Friday: spaghetti squash lasagne
Saturday: eating out at Ethiopian
Sunday: DS to cook (yet to decide what)

Monday: fish with almond crust, potato wedges, minty peas and homemade tartar sauce
Tuesday: sweet potato, chickpea and spinach stew
Wednesday: DH was out so I had leftovers from Tuesday
Thursday: Bolognese in slow cooker
Friday: Slow cooker chicken, will have leftovers for lunch at weekend

Haven't decided on weekend yet

Tuesday - honey chilli chicken with rice
Wednesday - beef stew and pastry, New potatoes, carrots, babycorn and green beans
Thursday - steak medallion with homemade wedges, salad and onion rings
FRiday - homemade Mac and cheese .Garlic bread, salad
Saturday - homemade fajitas wedges and salad
Sunday - sausage mash with onion gravy and veg

Last vegan week!

Tonight: veggie fajitas with tortilla chips and salsa
Tomorrow: black bean and sweet potato burger and chips
Sunday: curry roasted chickpeas, potatoes, cauliflower and brocolli
Monday: stirfry with rice noodles
Tuesday: falafel, pitta and hummous.
Wednesday: byriani
Thursday: aubergene pasta
