What can i make

What can I make tonight I've got chicken breast fillets in fridge and pasta I think something with that. I've only just started learning to cook so something really simple. I don't know if anyone can tell me a recipe I can do?

You need a few extra ingredients, but Really simple would be to pan fry the chicken in slices, with some mushrooms and garlic then cook the pasta while doing this. Drain pasta add chicken and other ingredients and stir in a herby Philadelphia tub or equivalent?

Makes a nice creamy pasta dish?

Do you have tinned tomatoes? I'd fry some finely chopped onion and garlic, add sliced chicken and fry that, splash of Lea & Perrins, pinch of dried herbs, dried chilli if you like it. Then tinned tomatoes and allow to simmer for 5 mins or so. Would be nice with pasta! You could jazz it up with olives, capers etc if you felt adventurous.

Chicken pesto (serves 2 people)
2 chicken breasts (Cut into strips and rinsed with cold water/drained)
Half an onion (sliced)
1 sweet pepper (deserved and sliced)
50g cream cheese (I use philladelphia light or low fat Creme freiche)
1 tablespoons basil pesto sauce
2 teaspoon oil.
90g wholegrain rice

Place rice in a saucepan of water on medium heat and allow to cook until light and fluffy
Put oil in a pan and heat
When oil is heated put in chicken, cook until no longer pink
Add onions and sweet pepper
Cook until softened
Add in pesto and cream cheese and stir until chicken and veg coated
Cook for a further 5-7 mins
Drain rice and serve with pesto chicken. It's a lovely meal and quick to make Smile

This is good - leave out the oil and use runny normal yog not greek yog.

I have similar in my fridge for tonight. I plan on

chopping chicken into small pieces and browning in olive oil
adding some chopped rashers of bacon
adding chopped onions and garlic
Splash of wine
Cooking for a while then
adding basil leaves, chopped fresh tomatoes and mange tout (because I have it leftover)
Maybe a splash of cream if I have it or else parmesan cheese at the end.


I think I will make that pesto chicken next week - looks lovely.

I've checked that recipe again. It should be:
2 tablespoons of basil pesto
1 tablespoon oil.
Option instead of rice :100g wholewheat spaghetti
