Not had one of these threads for a bit and I love them so...
Monday: garlic mushroom and egg fried rice (travelling all day and won't be fecked to make anything else)
Tuesday: white bean and salad
Wednesday: pasta with chickpeas, feta and capers
Thursday: spinach and feta puff pastry parcels
No idea what's occurring Friday

Erm curry tonight probably and that's all I know.
I ve been ill recently and in hospital with my asthma so still recovering, trying to eat well though.

Thank you, I really missing cooking, I have lots of homemade food in the freezer whuch is where the curry is from (chicken, lentil and coconut), but by the time evening comes just serving it leaves me breathless.
It's very frustrating.

I was ill on and off last week, so things have gone a bit pear-shaped.

So far we have:

Yesterday - artichoke and asparagus risotto, which I really enjoyed

Today - Greek salad, flatbreads (bought not homemade), bought falafel (Cauldron), homemade tsatkiki

Monday - black bean soup with nachos and guacamole

Tuesday - something with potatoes and leeks!

I'll probably do a Sainsbury's order to come on Weds. Not sure what I fancy though!

Maybe -

pasta with mushroom sauce (pasta with red pesto for mushroom-hating dd2)
caramelised onion and gruyere quiche, with salad and nice bread
some sort of curry

Mon - cowboy hotpot
Tues - burger and chips
Wed - lasagne and salad
Thurs - liver and red pepper stir fry
Fri - chicken jalfrezi
Sat - mediterranean Sardine pasta
Sun - cottage pie

Am struggling with meal planning at the mo as due to (years of) problems that appear to be food related, have cut out pretty much everything from my diet Confused, so may well develop malnutrition instead.

Dd will be having (and I will adapt if at all possible for me, some are definite nos):
M - jacket potato with baked beans and salad
T- pasta salad - less claggy than pasta bake and much less faff
W - tofu with rice and satay sauce
Th - salmon with new pots and broccoli
F - undecided. May make pizza. And then be able to eat none of it :(

Oh and today am planning to do Nigella's salmon and pumpkin curry. But will be using aubergine and butternut squash instead. I am undecided as to how successful this will be.

Monday - lamb shank (Iceland! ) with boulangere potatoes (home made) and veg
Tuesday - I'm at work late so jacket pot with beans and cheese halfway through my shift. Dh will probably shove something in the oven for himself
Wednesday - salmon lattice thingy with potatoes and salad
Thursday and Fri same as Tues.
Saturday we are out at a BBq
Sunday spag bol

Today: roast onion and mushroom toasties ( with cheese obviously)

Tuesday: mushroom and aubergine pasanda, rice and naans ( I am making this up- I will be cheeky and say if anyone has a good recipe to follow please post it -looking at you lastqueen and remusWink- )

Wednesday: pasta bake

Thursday: slow cooker cowgirl stew

Friday: red lentil dhal and flatbreads

Saturday: hopefully bbq sea bass with chilli lime coriander dressing, with boiled new potatoes and salad

Sunday: Persian stuffed duck with cous cous, tabboleh and grilled aubergine.

Tonight - honey, garlic, ginger & soy chicken with noodles
Tues - beans on toast or similar (swimming lessons after school)
Weds - salmon roasted veg cous cous
Thurs - chicken breasts with vegetable rice (probably add some spices to the chicken as it cooks if I've got a jerk seasoning or similar in!)
Fri - Lamb kebabs (trying a recipe from Lisa Faulkner book)
Sat - mackerel and something...
Sun - gammon, jkt pot and salad (in the hope the good weather continues, instead of a roast)

Well we've not much food in and I won't be able to do a shop until probably weekend so I'll be using up the contents of the freezer most likely!

Monday - sausage, mash, peas & onion gravy
Tuesday - chicken curry & naan bread
Wednesday - pasta bake
Thursday - pizza
Friday - meatballs & spaghetti

Ihavebrillo: it's a variation on a recipe from the jewelled kitchen;

Mandean duck stuffed with nutty ginger rice ( I use cous cous for speed but the rice version is better)

Ingredients

150g basmati or cous cous
2 inch pice of ginger peeled and thinly sliced
25g almonds
25g pistachios
25g pine nuts - all nuts toasted and roughly chopped

1 duck

1/2 teaspoon of cinnamon, paprika, nutmeg, tumeric, pepper, and salt

Cook your rice or cous cous with the ginger, and add your toasted chopped nuts.

Rub your duck inside and out with the spices , stuff with your rice or cous cous and roast at 170 for about 2 hours.

It's beautiful- the rice/cous cous gets all the lovely roasting juices and the duck is fragrant and crispy skinned. Highly recommended. The book had a sauce to go with it, but I can't remember it.

The leftovers are good in spring rolls, and Shredded over flatbreads.

That's a shame Remus- I always trust your veggie recipes, but a dhansak won't cut it I'm afraid. I'm trying to use up a pot of cream that's lying around.

I've not shopped yet and am a bit stuck for inspiration.
Today: baked cheese and onion tart, Greek salad and new potatoes
Tuesday : I'm out for a curry with friends. I'll make a veggie spag Bol for Dh and Dd
Wednesday: salmon and rice salad with borlotti beans
Thursday: Dd - veggie lasagne (has ATC) Dh and I, lamb steaks with tsatsiki and a big green salad
Friday: prawn linguine, garlic bread veg/salad of some description
Saturday : BBQ at sil's
Sunday: not sure yet, depends on what we're doing. Might be fish and chips if we take the campervan for a run out to the coast.

Yay I love these threads esp for veggie inspiration, tho ours is boring this week as we're moving house

Monday: carrot, tomato and lentil spicy sauce over (cauli for me) rice - added meatballs for DC
Tuesday: fast day so pizza for the rest of the family, pre bought soup for me
Wednesday: pasta and (home made) pesto
Thursday: it's my birthday, which I share with a couple of friends, so we're going to a wine bar and I've already scouted the menu for vegan options. And have ordered a vegan cake for us all
Friday: fast day for me again so Alfredo pasta for the family, some kind of cobbled together soup out of what's left in the fridge for me
Saturday: moving day! Beer and pizza obligatory
Sunday: probably pasta and pesto again

Cookingongas my curried generally involve chucking a tonne of chilli, coriander onion and garlic into a blender with whatever spices come to hand and either coconut milk or tinned tomatoes... No complaints yet Grin

I am shit at following recipes, I end up reading through like "can't be arsed" "where the fuck even sells that" "I don't like that" etc etc Grin

Week 2 of my one veggie day, one fish day and one new recipe project!

Monday: Spag Bol
Tuesday: chorizo, mushroom & pepper creamy tomato sauce with pasta
Wednesday: Spag Bol (again)
Thursday: Thai spiced salmon burgers with stir fry veg on the side
Friday: veggie egg fried rice
Saturday: out at a party Grin

Tomorrow: at a Eurovision party's with themed dishes haha so god only knows!!
Sunday: spicy bean sausage rolls
Monday: my housemate wants to cook for us.
Tuesday: will be out till late so probably cheese/ beans on toast
Wednesday: return of proper food! Asparagus and goats cheese gnocchi bake
Thursday: chickpea vindaloo
Friday: going to my friends

Not cooking much this week! Less to buy though

Going vegan for a month in June so this week is just all the cheese I can fit in myself!
Sunday: spinach and rocotta stuffed mushrooms
Monday: spinach and feta borek
Tuesday: broccoli cheese potato skins
Wednesday: out with an old friend
Thursday: red curry Thai noodles
Friday: sundried tomato risotto.

Ok:

Sat: DS is cooking and has decided upon quiche and fish cakes Hmm (he's 7)
Sun: friends over for BBQ, they'll bring whatever meat/fish and we'll do various salads, grilled veggies, sweet potatoes baked in the embers etc and I'm going to do vegan no bake cheesecake for desert. And sangria
Mon: "cheddar" and broccoli soup
Tues: DH and I are out so pasta pesto for DC
Weds: Angel hair pasta/courgetti with romanesco Harissa sauce
Thurs-Sun: I'm away with some friends, catering will be tough as I'm vegan and one friend is paleo but I think we'll just take a load of random stuff and basically picnic/talas the whole time. I fully expect DH and DC to survive on pizza

Having a minor op this week & won't be able to get myself to shops for a while (& I'm usually a shop every other day person) so I've made sure we have a lots of simple to prepare meals in, nothing exciting though.

Chicken fajitas
Pasta carbonara (or risotto carbonara?)
Pasta with chorizo & jarred peppers
Steak, oven chips & peas or salad
Salmon, noodles & stir fry veg
Fish fingers + ??
M&s chicken pie with new pots & veg
Eggs in some form
Takeaway menus!
