I've made these thelastmouthful.wordpress.com/2012/02/07/stem-ginger-shortbread/ loads of times and they're delicious. Also work well with chocolate chunks and hazelnuts.

If you Google slice and bake or icebox cookies you should find some other suggestions

150g softened butter
150g caster sugar
grated rind of 1 lemon
1 beaten egg
225g plain flour

grease two baking trays

put all ingredients into bowl and mix until smooth dough is formed. Knead a bit then wrap in greaseproof paper and chill for 30 mins.

roll dough into sausage 5cm diameter and 20cm long. rewrap and chill 30 mins.

preheat oven 190c. cut dough into 5mm slices. bake for 12-ish mins until golden.

lift off, cool on wire rack.

Where I grew up "refrigerator biscuits" would mean that thing where you crush bought biscuits and mix them with melted butter and chocolate and "other stuff" and then put them in the fridge to set.

100g sugar
200g marg/butter
300g plain flour

That's the basic recipe, you can freestyle from that basis with e.g. Vanilla, cocoa, raisins.

Cook at 190C for about 20 minutes
