Pitta bread (hates me)

I can't cope with pitta bread Confused. Ooh handy little pockets, fill them up with stuff for lunches says everything I see re pitta bread.

Except mine won't turn into pockets. They turn into a pile of broken bits of pitta bread and crumbs. If I do manage to get something in them, they disintegrate on transportation to mouth and drop in lap.

I've tried different ones, I've tried warming them up, I've tried threatening them.

Stuff pitta bread! (or in my case not).

Very timely thread for me - I had this exact issue this morning and was flummoxed! Put in toaster on lowest timed setting and hey presto - I could make a pocket!!

I keep them in the freezer & cook in the toaster from frozen, which seems to make them able to 'pocket' themselves.

Sprinkle them with a little water before toasting them.

I put them on the grill with a sprinkling of water....maybe you're overheating them?

Cut them in half with scissors and lightly toast, they will puff up beautifully!

My previous warming attempts might have involved the [ahem] microwave.

Will give the toaster a go.

Not too toasty though, or they will go all brittle. Pitta toasting is a fine art.

I cut in half and toast on the number 3 setting.

Once toasted, cut along the side with scissors then put closed scissors in the pocket and slowly open them to widen it.

I put in toaster on lowest setting, remove with tongs and hold down with tongs whilst cutting open one long side. Hold pocket open with tongs and quickly put in some sliced cheese/ham/houmous/whatever then put back in the toaster for about 30 seconds. Delicious!
Warning: Do not attempt if you have holes in the bottom of your pitta or if you have DC who are likely to call you away from toasting pitta. Grin

Warm them up then wrap them in a tea towel for a few minutes - the steam helps them pocket themselves!

I haven't been able to eat Pitta bread since we got back from Cyprus last year. Oh my word, they are totally different there. Fluffy, soft, tasty, fantastic smell; beautiful. I could live on them. The things we have here in the UK are a cardboard disgrace.

In fact, if anyone can give me a fool proof recipe for that sort of heavenly Cypriot pitta instead of the rubbish we get in the UK, I would love you forever

Grill or toast always - even if you want to eat them later in a picnic.

Am I the only person in the world who doesn't toast them BlushI just cut them in half and then sort of 'tease' the pocket open...

Split pitta in half, spread will salsa, top with grated cheese, ham, onion etc & pop under the grill till the cheese is melted. Pitta pizza!
