Healthy leeks (!?)

Hiya, havent posted in recipes before! 😊
I've got a load of leeks to use up. It's there a diet friendly way to cook them as a side to tonight's cajun chicken? Will they be nice fried in a tiny bit of oil or i have greek yogurt to add maybe? What herbs?

Any quick tips appreciated!

I like them lightly fried in a tiny amount of olive oil and a splash of water then I add garlic and lemon juice at the end. I normally throw in a handful of spinach if I have it and maybe some frozen peas if I feel the need for lots of veg!

I like them roasted till slightly charred in a bit of oil. Or done on a griddle pan. Nice with a bit of chilli oil and feta.
