what healthy meals do you cook for your family?

Hello, I am about to go shopping and need some inspiration for some healthy evening meal suggestions. Last night I had salmon fillet with potato and salad but tiring of this.

What is your favourite healthy meal?

Well, I guess it depends on how you define healthy ;)

I like a big veg stir fry with a piece of meat, fish of chicken. I also like a fish soup with lots of vegetables. Or a curry with a side of saag. Basically I try to start with the veg and work from there, I find that if I start with the meat, then the veg gets less priority and I end up with meat and potato/rice and whatever veg I can throw in a pot of boiling water.

We mainly eat vegetarian-I agree with misscph, start with vegetables and you can't go far wrong!

On our meal plan for this week is vegetarian bean chilli with rice, yogurt and homemade guacamole, stir fry with "chicken" queen and wholewheat noodles and slinking world curry.

Slinking world?!! I obviously mean slimming world. We don't use the low fat spray.

The bbc good good site has a good healthy eating section.

5 bean chilli
Carrot and lentil cottage pie
Chickpea and spinach stew
Vegan burrito bowl ( rice beans avacado tomatoes peppers etc)
Stir fry
Chickpea Dahl

oh I like the sound of chickpea and spinach stew.

I cook anything with beans/lentil
throw in carrots, peppers
brown rice.
feels healthy.

My family winner is meatballs (supermarket) in very healthy home made tomato sauce with onions, garlic, tinned tomatoes and/or jar of sauce, fresh or dried herbs, pancetta or bacon, and any chopped up very small (for disguise) veg we have in. And plenty of pasta.

This is often a store cupboard go-to supper for us if I have meatballs in the freezer.

I'm making a huge vat of Tom Yum soup today, that's rather health which is good as I'm a bit addicted to it at the moment.
We're having a veggie tagine tomorrow I think.

I agree with starting with the vegetables first.
