Made a fabulous easy vegetarian shepherdess pie today. Any other vegetarian recipes you'd like to share? Preferably easy/cheat.

I didn't have much meat in apart from tinned so thought I'd make a vegetarian meal.

It was so easy. Cheating tbh.

I fried up a large onion in a little oil. Added three tins of beans, one butter bean, one kidney and chickpea. Then I added a jar of Lloyd Grossman sweet red pepper sauce, one carton of passata and seasoned well. Simmered 20 mins. Meanwhile I boiled 6 chopped sweet potatoes. Then mashed them and added butter and cheese. Bean mix topped with potatoes and baked 20 mins. Easy as pie and very tasty. I baked green beans with lemon juice, seasoning and dash of olive oil for 20 minutes too.

Any easy ones from you please?

I made cheesy potato & baked beans for dinner tonight. Homemade beans.

Baked beans
2 sticks of celery, an onion & garlic chopped finely, sweated off in olive oil
Add spices - cumin, smoked paprika & oregano (2tsp each) and cook off for a min or two
Add a jar of passata, any beans you fancy (i used cannellini)), two bay leaves & 500mls stock
2tbsp maple syrup
2tbsp tomato puree

Bring to boil, then simmer until sauce nice and thick.

Meanwhile boil potatoes. I diced them, then once cooked fried them off.

Add beans to potato, smother with cheese and grill. Could probably add eggs if you wanted.

So tasty and actually really quick. I left the beans simmering for ages but it was ready within half an hour. Will prob add smoked bacon next time i make them Grin

Lentil lasagna? Although, it's not that quick it is quite tasty.

Fry onions with garlic (some chilli if you like it slightly more spicy, add Passata (maybe a jar of the grossman sauce), garlic, tomato purée, oregano, frozen spinach and either tinned lentils or a few handfuls of red lentils.

Simmer for twenty minutes (or until the lentils have softened), layer the sauce, lasagna sheets and bechamel/cheese sauce.

Bake in the oven for twenty mins.

This is my kind of thread!

I do something similar to come's beans, except I use this in any kind of Mexicany-type dish. Good in grilled burritos, as the base for a chilli, on baked potatoes etc.

Fry up an onion and a clove of garlic in oil. Stir in a good shake of cumin, some dried coriander and lots of smoked paprika. Add chipotle if you want smoky heat. Add a tin of pinto beans. If they come in nice sauce, put a bit in. Black beans would also be tasty. Then put a tin of tomatoes and a squeeze of barbecue sauce in and simmer down for at least half an hour.

This goes unctuous and delicious and I batch cook it for the freezer.

D' you eat fish? Peppers cut in half with oil, garlic, mozarella and anchovies roast till golden colour. Superb!!

Yes we all eat fish and meat. I and dcs enjoy vegetarian food, dh likes it but loves meat.

Veg satay

1 can of coconut milk
1 heaped tablespoon peanut butter
1-2 tablespoons sweet chilli sauce
2cm cube of peeled, grated ginger or 1 tsp of ground ginger
pinch each of turmeric and cumin if you have them
lime or lemon juice and zest if you have it
baby corns chopped up or cup/tin frozen/canned sweetcorn
2 cups cubes of butternut squash (you can get it ready cubed and frozen)
1 red pepper chopped
1 bunch spring onions chopped
1 cup of frozen peas or pack of sugar snaps
handful of broccoli florets or 2 handfuls freshly washed baby spinach or 6 cubes frozen spinach

melt peanut butter in a saucepan over v low heat. When soft, add coconut milk and stir till blended, then add chilli sauce, spices and salt. Add butternut squash and cook for five mins (bit longer if from frozen>) Then add red pepper and cook for another 3 mins. Then add the rest of the veg, bring back to the boil and simmer for 1-2 mins.

Serve with rice or naan. Very easy. DC love it as it's not too spicy.

If you dH loves meat, you can add chicken breast or boned thigh to it, just cook it in the sauce for ten mins before adding the other ingredients.

I love this chilli con veggie - it's lovely and easy and my children adore it with avocado slices, fresh tomato and tortilla chips or wraps. Even my very fussy one will eat it.

Pearl barley risotto. It's really quick and much much nicer than it sounds - especially if you can add a few extras like wine, cream and parmesan.

Fry onions and garlic in butter.
Add Pearl barley (about 1c) and stir.
Add vege stock and veges (our faves are broccoli, cauliflower, peas, butternut squash, mushrooms). White wine if you have it.
Simmer for about 15 mins until barley has absorbed liquid.
Add salt, pepper, herbs (fresh mint, or parsley are our favourites), cream, parmesan.
Top with more parmesan and herbs to serve.

I do a chilli quorn carne that the whole family loves. We're not veggies, so I sometimes add beef stock to it. They say they can't tell the difference between the quern and minced beef. Just add red onions, peppers, courgettes, garlic, herbs, smoky paprika, chopped tomatoes or passata and kidney beans to the quorn mince and serve with baked spuds or rice. Or fill tortillas with it, roll up, grate cheese over them and stick under the grill. DC love it done like that.
