Vegan pie filling

DS is cooking Valentine's Day dinner tomorrow night and wants to do chicken and ham pies. I'm vegan and DH is doing a vegan month, what fillings can we have instead? (DS still doing chicken and ham for himself, his sister and our friend who's staying)

Caramelised onion and roasted root veg/sweet potato? How do you make vegan pastry?

Spicy sweet potato red lentil and coconut. The red lentils go thick and mushy chop the sweet pot fairly chunky so it keeps it's shape. Garam masala and as much chilli as you want. Add a bit of coconut cream.

Most ready made pastry is vegan. Jus roll def is.

Roster butternut squash and red onions with spinach and pine nuts would be nice.

You can make this one like a shephers pie

Obviously to vegan it either leave out the cheddar or use the vege equivalent

Caramelised leek garlic and ground almond.it needs plenty of seasoning and you add a bit of stock to loosen it but it's lovely in a flan so could work in a pie. Mushroom and chestnut would be great for this weather though.
