Anyone have a cheap simple fish or veggie curry recipe?

I'm always put off making a curry from scratch as I'd need to go and buy various spices, coconut milk etc. Does anyone have a fish or veggie curry recipe that's simple and doesn't mean buying loads of ingredients I personally will only use for curry - obviously realize I'll have to buy one or two things though.

You could try making one with a bought spice paste and coconut milk to start with? Otherwise, as a minimum I'd buy turmeric, cumin seeds and mustard seeds. Then you could just buy in fresh chillis ginger and coriander as needed.

I make a lentil and spinach curry with Thai red curry paste (the Thai taste one)

Briefly -
1-1/12 tbs curry paste heated in oil for a couple of minutes.

Add shallots and a big handful of chopped fresh coriander, or as much as you can bear the taste. I also add chilli flakes. Heat for another couple of minutes.
Add a large blob of tomato purée.
Add 250g red lentils and coat with what's in the pan.
Add 500mls water and bring to the boil.
Once bubbling add 1 tin of chopped tomatoes and a diced up butternut squash and reduce to simmer along for 20/25 mins.
5 mins prior to serving add a bag of baby spinach to wilt.
Serve immediately with toasted pitta.

I also add chicken occasionally at the start.

If you want really simple, this fish one is pretty good, you only need curry paste in addition to a few store cupboard ingredients...
