Foolproof gingerbread recipe

Hello, I'd like to make Wookie cookies, for my sons Star Wars themed party. I can bake, reasonably, but have never made gingerbread men without them either being too crumbly or tooth breakingly solid. Anyone got a fool proof recipe?

Thank you dancing queen, I'll try those! My oven is pretty ' true' to temperature, and generally cooks things as per the instructed cooking time, fingers crossed!
