Acommedation has microwave, kettle and fridge - what healthy meals could you suggest?

Hi,
I will be staying somewhere for at least a month in a place which has just a microwave, kettle and fridge. I try to eat well & was wondering what meals you could suggest from having those appliances?

I was thinking jacket potatoes and salad for one meal.

You can do scrambled eggs in a microwave

Lots of soups (carton not home made but so long as you keep an eye on salt content you should be okay)

Porridge for breakfasts, maybe?

Some of the M&S Count on Us or Fuller Longer meals aren't bad and you could add extra veg/salad etc.

Ready made soup and wholemeal bread?

Butternut squash, cubed, put in a large bowl. (don't add water)

Cook for 5 mins. Add butter, mash. Really good with a ready meal or soup.

Any chance you can smuggle in a toaster? The you could do er, well, toast Grin and also egg mcmuffin type sandwiches:

Toast a English muffin.

Cook bacon in microwave. Remove. Set aside.

Whisk an egg with a drop milk. Put in bowl. Microwave one minute. Remove, add slice cheese, back in MW for ten secs.

Mayo on muffin, slice tomato, piece lettuce. Add egg and cheese, then bacon.

Nom!!!

You can cook rice in the microwave, but microwaveable rice is actually OK and very quick, which will probably matter if you're cooking everything in the microwave and want the rice to go with something. Sainsburys do own brand sachets of all kinds of microwaveable rice for 50p.

Similarly, you can cook potatoes in the microwave and then mash them, but frozen mash is quite nice. Fresh ready-made mash is even easier but more expensive.

Tinned fish can be v v healthy, and can go well with jacket pots, bags of microwave rice, salads etc -or toast if you have a toaster as PP said.

Baked beans too.

As you've not said, I presume you don't have any food issues, eg veggie, allergies, and you're not low carbing or anything like that?

You can get microwave rice, cous cous, quinoa and lentils. Just empty half the pouch and heat half one day and the other half the next.

Look for McIntosh microwave meals www.mcintoshfoods.com/our-products/ they are quite tasty.

Jacket potato with a ready made veg chilli.
