What can I do with a can of chickpeas?

I'm doing a tikka kebab for tea but fancied a chickpea and spinach side dish I had planned too. I have no spinach and can't be arsed to get some, so what could I do as a side with the chickpeas?

Hummus! Stick them in blender with a good flight of olive oil, a teaspoon of peanut butter and a garlic clove (or two if you like garlic).

You could do your regular recipe but replace the spinach with any veg you have to hand, beans or peas would work well.

Or drain them well, toss in a little oil and a few pinches of any spice you fancy and roast.

Cheesy Chickpea Patties

410g can chickpeas, drained and rinsed
2 tbsp parmesan, grated
1 egg yolk
2 tsp flour
2 tsp tahini paste (if you have it)
1 tbsp olive oil
chopped parsley (if you have it)

Bung everything in the processor and whizz to form a nubbly purée. Scoop out spoonfuls of the mixture onto a baking sheet, then bake for 30 minutes at 160­°c until just tinged with brown. Cool slightly. Lush dunked in yoghurt Smile

Gentry fry with some spices and then gently mash them up a bit so you have a smashed chickpea mash type thing.

I like a chickpea salad with red onion, lemon juice, olive oil, and coriander and paprika spices.
