Back meal planning after a very unhealthy ten days or so!

Tonight: pearl barley risotto with lots of green veg
Tomorrow and Sunday: winging it but trying to do so healthily!
Monday: Cous Cous and roast med veg
Tuesday: chickpea pesto salad
Wednesday: jerk sweet potato and black bean salad with rice
Thursday: puy lentils with garlic mushrooms and rocket
Friday: pasta with spicy sundried tomato and broccoli

I'm so looking forward to actually eating some nice healthy food!!

Those puy lentils sound gorgeous.

I don't know what order we're going to eat them in, and it's all pretty basic and boring after a run of fairly 'special' meals, but in the next few days we've got something along the lines of:

veggie chilli with deconstructed guacamole and rice
veggie spagbol
homity pie and salad
cous cous with roasted vege and feta
lentil soup and cheese scones (if I cba to make them - bought bread, otherwise!)

Courgette spaghetti in a spicy tomato sauce
Tuesday
Broad bean, minty pea and feta quinoa salad
Wednesday
Broccoli pesto with orzo and roast veg
Thursday
Falafel wraps with salad hm chilli sauce and sumac sweet potato wedges
Friday
Pineapple and cashew nut fried brown rice (healthier version of my Chinese takeaway fave)
Saturday
Sweet potato, black bean and sweetcorn chilli
Sunday
Roast dinner, having Whole roast spicy cauli as a main

Over the coming week or so I am trying to use up the last of the Christmas stuff by adding a few fresh bits and pieces so we are having the following:

Tonight - fillet steak, mash, roast carrots & peppercorn sauce

Then in no particular order:

High tea - sausage, bacon, egg, pudding, mushrooms and sauteed potatoes
Lasagne, salad and garlic bread x 2 nights
Crispy duck with pancakes (Aldi!) and will do stir fry veg and egg fried rice
Parma ham and mushroom pasta
Chicken curry with rice and poppadoms x 2 nights

That's the next 8 nights taken care of and I also have some other bits in the freezer to use up such as potato gratin, potato croquettes, veg etc so can base some more meals around them

I am glad to be back to meal planning after the free for all over the holidays!

My favourite time of the week!

Friday: the pasta dish on my op
Saturday: fajitas with mixed veg (mushrooms peppers and sweet potato I think)
Sunday: Italian bean stew and mash
Monday: chickpea and spinach curry
Tuesday: Greek salad and hummous and pitta
Wednesday: going to a friends
Thursday: Ma Po tofu (old fave from when I lived abroad)
Friday: pea risotto

Crab and sweet chilli noodles
