Nigella's Easy Lemon Cheese Cake

1 pkt digestives
30g butter
Blend biscuits and butter in food processor until fine crumbs. Press crumbs into greased/lined tin. Place in fridge.

500g cream cheese (Philidelphia or cheap alt)
1 jar lemon curd
1/2c sour cream
Blend all together in processor until smooth. Spread over base and fridge until set.

Not quite as lovely as the new york one - but miles quicker, easier and cheaper :)

I have a really good but very simple baked cheesecake recipe that was printed in Delicious magazine but is no longer available online. I can email it if you're interested! Biscuit base and sugar, sour cream, cream cheese and flour for the cheesecake baked for 40 minutes. You can add anything you like for flavour - I put raisins soaked in rum in the one I made for Christmas.

I was going to say Nigellas London cheesecake Grin I can't do a link but theres an Orange, Aperol Spritz one with an Oreo crust on the delicious magazine website which is amazing and v easy

Waitrose New York vanilla cheesecake, topped with a thin layer of cream whipped up with a bit of icing sugar orange zest and a spoonful of brandy, topped with fresh raspberries. No point in making cheesecake when Waitrose own tastes better.

Shortbread, ginger and lemon zest base (crystal ginger best); cream mixed with mascarpone and soft cheese, plus a good amount of melted white chocolate, fold in chopped strawberries, drizzle with dark chocolate and stud with chocolate covered strawberries. Delish.

Non bake - 125g crushed digestives. 40g softened butter, 280g soft cheese, 397g tin condensed milk, melt butter and finely crush digestives, leave in fridge (in the cake tin) whilst whisking cream cheese and condensed milk, put topping on base (I added half a squeezed lemon), leave to set for at least 2 hours, it's so yummy and easy, no baking required Smile

Ooh, ooh, yes! I've got this one!

Base: 3/4 of a packet of digestives (or more if you like a thicker base)
50g butter, melted

Smash biscuits into crumbs and mix with melted butter. Squash into the base of a round tin (I've got those ones that you can lift the base out of...genius)

Base done.

Cheese bit: one standard size tub of mascarpone (Asda/tesco sell for around £1)
200g white chocolate (I sometimes put in 300g Blush)
1 tub cream cheese
384ml carton of double cream.

Melt chocolate and then stir everything together. Do it sloooowly or you will get cheesey lumps.pour mixture on top of base. Sling in the fridge for a few hours until it's set.

Then, bask in the glory of all of the compliments that you will get about your cheesecake. Don't ever admit to the excessive cream and chocolate use. Om nom nom!!!!!!

Oooh I like the sound of that Pudding! What size cheese and marscapone? Are 280g Philadelphia and 250 Marscapone the sizes you use?

pony sorry I can't link with this phone but if you Google nigella white chocolate and baileys cheesecake its on her site. Its a non bake and the thought of it makes me want to weep. Its the best desert I have ever made and never failed. You do have a moment where you think it has seized up but keep the faith and keep whisking and it will come good. Hope you make it and hope you love it.

Sounds about right... Whatever the standard size Philly is, not the big tub. 250g sounds right too for the mascarpone... I've made it so many times now that I always count it in tubs now! It's so easy to make, takes no time at all and is the best pudding I've ever put in my mouth by far. And I've put lots of puddings in my mouth. Wish I hadn't been so lazy and made one for Xmas now Angry

no need to make caramel sauce

helps to have handheld mixer

my dd made it for Christmas and she isn't expoerienced baker and it came out very well

we left it to cool down and left in the fridge overnight before taking it out of the tin over 24 hours later, it kept fine for another 48 hours in the fridge (due to huge amount of other puddings in the house not because it wasn't nice!)

we used springform tin
