I've got some chicken stock to use up and soup seems obvious but I can't find a recipe I like. Have got celery onions but no carrots. Also have left over roast chicken. Dh doesn't like broth style.
I'll await your gems :)

Have you got potatoes? Bung some of them in with everything else and it will be lovely.

IDismyname · 30/11/2015 19:08

I'm thinking a minestrone (sp?) type soup with chicken, whatever veg you have, some pasta shapes or broken spaghetti, and the chicken stock.

However, I'm not sure quite what 'broth style' soup is!

Misty9 · 30/11/2015 19:19

Broth style is when there's more veg than soup Grin he's a fussy git. The last time I made leftovers soup it turned out more like puree and wasn't very nice... minestrone sounds interesting.
When you say 'bung in potato' what exactly does that entail? We're both useless without a recipe!

Or you could do risotto instead - you've got the basics there.

Had leftover risotto this evening Grin

Broth
Diced veg: carrots, potatoes, celery,
onions,
Canned white beans (or you could use black bean, but rinse them first)
Garlic powder (to taste)
1 t. cumin
S&P
Red pepper flakes.

I put this in a crock pot and cook on high for 3-4 hrs then add the leftover roast chicken and heat through

milaforni · 30/11/2015 20:03

Also you don't have to add carrots and you can put in other veg that you like

Chicken noodle soup. Shred the chicken, throw in with noodles and sweetcorn, some mushroom sliced up if you have them and finely sliced spring onions.

patterkiller · 30/11/2015 20:05

Chinese chicken and sweet own soup. Soooo nice homemade.

patterkiller · 30/11/2015 20:05

*corn not own.

Misty9 · 30/11/2015 20:28

Ooh you've reminded me of a delicious chicken and sweetcorn soup recipe...Might do that though not sure if it would heat up OK?

Well, my favourite soups to make are lentil & bacon, cauliflower, watercress, french onion, minestrone, leek and potato. But none of those really help with your ingredients!

Misty9 · 01/12/2015 22:44

Ooh, lentil and bacon sounds nice - do you have a recipe? the stock is in danger of being thrown out... :)
