Looking for delicious chicken recipes please

Thanks for helping, I am looking for delicious chicken recipes, preferably no bones. I am cooking for 8 and chicken seems to be the one food that everyone eats.

Oh, it has bones, it's thighs. Sorry, but boneless thighs (with skin, crucial).

My favourite go-to chicken dish, which is easy to up the quantities of:

Saute onions and garlic til before they colour
Add your chicken bits (I like deboned thigh as stays moist), brown
Add about a small glass of white wine, reduce to about a tablespoon
Add about 500ml chicken stock, boil and them simmer til it's reduced to a third of it's original Add cream, dijon mustard and tarragon
Cook til all flavours combined.
Serve with any form of potato or rice.

From start to finish probably takes about 40 minutes and it's not really that sensitive to having to get quantities 'perfect', so just keep adding more of anything if you think it needs it!

Chicken casserole; Diced onions, sliced carrots, quartered mushrooms, diced chicken breast and Heinz tomato soup. Serves 4 so double for 8 and serve with rice. You really truly don't know it's made with soup.

Finely chop a couple of leeks, saute in butter in a shallow pan. Add a tin of tomatoes and some thyme. Seaon.

Cut a block of feta cheese into slices, wrap each slice in a boneless chicken thigh. Poke each chicken parcel into the top of the sauce, put a lid on the pan, and simmer for about 20 minutes until the chicken is cooked through.

Serve with rice.

Unbelieveably easy and delicious.

Chicken breasts stuffed with Boursin and wrapped in bacon - very easy and can be prepped in advance

Chicken, vegetables, chicken stock, tablespoon of either dried tarragon or dried thyme. Brown onions then chicken, add stock and veg, simmer til cooked or oven lowish for an hour

Chicken stuffed with mozzarella and basil leaves, wrapped in Parma ham. Bake 20 mins covered in foil then remove the foil and bake another 20 mins at 180

Just in the oven as you would any chicken breast. Depending on size I guess I normally cook them for 30-45 minutes at 190.

Schnitzels? Cut breast or buy pre-cut pieces of breast. Dust in flour - dip in egg then breadcrumbs then fry till golden. Lovely with potato salad and a variety of dips Smile
